Happy Canada Day

Happy Canada Day!!!

We headed down to the village this morning just before lunch to take in the sights and sounds of the Canada Day parade :)

The kids love to see all of the fire engines, police cars and ambulances that are all decorated up and blaring their horns *grin*.

They even tossed candy this year which got all of the children around into a frenzy of collecting :) I ran into an old friend which was nice and we got to catch up on what was happening in each others lives and we even enjoyed a hotdog which is a real treat as I very rarely buy them and wouldn't you know it only one of my three actually ate one LOL.

After the parade was over we headed home for lunch as I had made a special Canada Day cake (up in the first photo) which was so yummy and strawberry spritzer drinks to go along with it. Isn't the little strawberry garnish so cute :) Seems like every day is a party around here these days *grin*.

Hope you all had a wonderful day celebrating and to my American friends I wish you all a happy Fourth of July this weekend!!

I'm not sure how I came to rounding up this set of photos. Perhaps it was the thought of traveling to a quaint town by the sea, picnicing in the park, cruising along with the top down and catching the sunshine in a field of golden poppies *grin*.

Recipe ~ Raspberry Strawberry Scones

These scones are a huge hit around our house and they're entirely whole wheat which is an added bonus :) This batch will make 18 large scones so there is plenty to warm up for the following day.

Ingredients:
  • 6 cups freshly ground soft wheat berry flour milled on your finest setting or 6 cups of whole wheat flour
  • 1 cup sucanat or white sugar
  • 4 teaspoons baking power, preferably aluminum free
  • 1 1/2 cup unsalted butter
  • 3 cups milk or buttermilk
  • 1 cup sliced strawberries
  • 1 cup raspberries

Cut the cold butter into your flour until it resembles a course texture similar to corn meal. I actually like to use my food processor to do this as it only takes a couple of pulses to cut the butter in nice and fine :)

Next add your sugar and baking powder and use a fork to sift it through your flour/butter mixture. Once you've done that you can add your raspberries and strawberries and gently coat them with your flour mixture. I had the berries frozen in the freezer from last summer but you can substitute any sort of berry in their place. Blueberries are lovely also :)

The final step is to add your milk and blend it all together just until your flour is moistened. Don't over mix it! Using an ice cream scooper or spoon similar in size scoop nice plump balls of your scone batter onto parchment covered cookie sheets and bake at 425 degrees Fahrenheit for approximately 15-20 minutes or until nice and golden brown. You can test them by inserting a knife into the center of a baked scone and if it comes out clean then it is done. Another way to test if they are finished baking is to gently press down on the top of the scones and if they spring back up after you release your finger then they are finished :)

Strawberry Bonanza

Sweet Strawberries

Strawberry season is upon us and everywhere I turn lately those luscious red berries are calling my name *grin*. So I finally broke down and bought a carton of them :)

Strawberry Pancakes

Yesterday morning I had my parents down and the kids and I treated them to a strawberry pancake bonanza! It definitely wasn't a good day to be counting calories since we went through 1/2 a litre of whipped cream in the morning and then we gorged ourselves on strawberry shortcake after dinner LOL.

You know that old saying 'a minute on the lips a lifetime on the hips'? Yeah, I'm pretending I've never heard about it either *grin*. Maybe I should take a power walk around the property tomorrow..... I think my thighs will thank me :)
