Sunshine & Sausage Making

Now that is an odd title I do admit but since my photos include a little bit of both I thought it fit *grin*.

The sun graced us today with its warmth and light and it felt so good after the last bout of rain we were soaked with. After lunch we bundled up and set out for a walk to burn off some extra energy from being house bound and searched for interesting finds along the way. We admired the snow still clinging to the highest mountain peaks, spied on little Sparrows and Spotted Towhees and at one point my 5 year old even ripped his boots off so that he could walk barefoot over a bunch of clumped moss along the roadside LOL. Now that would have made a good photo. Oh how I wish I had brought my camera with me!!

We have finally finished putting our cow into the freezer which is such a relief. It was two very long days of cutting and wrapping from morning till night and tired aching feet and backs but the sight of our freezer bursting to the top with those brown paper packages makes it all worth it.

Our favorite part of the whole process though is making sausage :)
I use a mix of 3/4 beef to 1/4 pork, fresh garlic and onions run through the grinder along with the meat and a bunch of spices mixed in to make our sausage meat. I don't add any extra fat or fillers, just the basics and then once its all mixed together Hubby feeds it into our grinder which has a handy little sausage stuffing attachment and I control the sausage casings, filling them uniformly for twisting into links later.

The whole process moves along quite quickly and if you ever need to buy a very economical meat grinder with a lot of punch I highly recommend Moulinex. We have a Moulinex HV6 and it has two plates for course and fine grinding, sausage horn and a reverse function in the even that it jams and we have been using it for the last 9 years. It has ground all our beef that has been butchered since purchasing it and we finally had to sharpen the blade this time around as it was a bit dull. I'm not sure if you can still get the HV6 but I see there is a newer model now available :)

So here they are all twisted into links and portioned into dinner sized amounts. They are drier than a normal store bought sausage understandably since we don't add any additional fat but they make up for it in taste and I know exactly what is in them :)

Nature Walk ~ Bald Eagle Spotting

On our nature walk this week we were treated to a spectacular show of bald headed eagles :) We have a network of trails that wind up the mountain behind our house and to our bottom field and it was down there that we came across a good half dozen of them.

A few of them were skittish and flew away but the others that remained eyed us curiously from their tree top perches. I would have loved to have gotten a little closer for a better photo as these ones are a little grainy but my little guy was so busy stomping tracks into the snow that I didn't dare go any further into their comfort zone *grin*.

Speaking of tracks we found these great bird tracks!

Now I'm not certain if these were from the eagles but we found them nearby and they look like the tail feathers of a large bird as it sat in the snow. I should have put my hand or shoe by them as they really were quite big. I have never found anything like this before so it was so neat to share it with the children :)

We hung around as long as we could before we became to cold to stay an longer but we got to see a few of them soaring back and forth between different trees and even a few juveniles that joined the older eagles. I wish I could have stayed much longer just admiring their grace and beauty. A true winter treat :)

Unplugged Family Fun

Old man winter has been creating havoc around us this week and on Sunday afternoon he hit us with one heck of a windy snowball toppling trees up and down the island, knocking out our power for 23 hours and leaving us with no telephone service or internet for even longer.

But that didn't stop us from having fun *grin*.

Our evening was lit by oil lamp and scented with delicious smells of beeswax candles while our ears were filled with stories, board games, and silly chatter late into the night....

and plenty of outdoor play during the day. Thank goodness for wood heat and hot soup to thaw out our bodies after being frozen in the blustery cold and I'm sure that eating loads of icicles does nothing to keep children warm except it does bring giant smiles to their faces *grin*.

The 'girls' don't seem to be fond of the snow though and for the first couple of days they actually refused to leave the warm straw covered floor of their house :) My oldest ended up stomping down a nice path and area for them to come out to eat fresh scraps and in the end I think that it was stepping in the deep snow that they didn't like because they didn't mind staying on the hard packed snow. As you can see in the photo above though the lure of food would pull them into deeper areas if they thought it was worthwhile enough *grin*.

The falling snow has turned more to rain these last few days though and it is starting to melt our snow reserve but hopefully it won't all go away taking it's bright white beauty with it!

Winter Wonderland

I am absolutely smitten with the beauty of winter :)
The snowy weather has continued here all week. While it hasn't amounted to much more than 5 or 6 inches it has tried awful hard and the temperatures dipped as low as -14 freezing our back door permanently shut for 4 days!! Thankfully we have another door so we didn't have to try to hard to get it unthawed *grin*.

I had been holding off heading into the city for groceries and errands since the highway has been covered with slush and hard packed snow but the fridge was mighty bare and hubby has been home from work due to all the wind up this way so we bundled up and ventured out with the truck.

Normally the trip takes us just under an hour but it was over an hour this time before we got into town as we slowly made our way over the mountain, through the fog and sometimes rather slippery conditions.

The trees covered in snow and the silence that it brings made the trip so enjoyable though that I could have gazed out the window for much longer. You just can't beat a the winter wonderland that snow brings :)

The cold weather has also brought with it the perfect temperature for killing our beef cow. We raised him from a little calf on our own pasture and it will be so nice to have yummy homegrown beef in the freezer again since I never buy any from the supermarket.

We didn't have a cow for butchering last winter so we were behind. We always try to have one cow ready every second winter so that we don't run out of meat but it didn't quite work out that way this time.

With the hide removed Hubby and my dad worked on taking out the gut and all of the organs so that they could cover the meat and raise it up high where it will hang for 2 weeks before we do the big job of finishing the butchering and all of the wrapping.

My daughter was really interested in watching the men work and was not squeamish about it at all which was great and we got to have a really good look at the heart, lungs, kidneys and liver.

I should have thought of it sooner but it would have been really cool to have done a biology block for our homeschool courses so I'm going to have to think ahead next time and get a bunch of materials ready so that we can do a full dissection class. Every moment can be a learning moment *grin*.

Hello King Winter

Winter has finally come to our little neck of the woods bringing with it breathtaking beauty.

It started snowing yesterday evening, with the snowflakes falling quite heavily and this morning we awoke to a little over 4 inches of snow on the ground :)

I could hear the squeals of delight from the family room as I lay all cozy in bed and I knew that I was going to have to officially designate today a snow day because there was no way that I was going to get the children to focus on school work with all that snow beckoning them to come out and play.

With their snowsuits on and their gloves cinched up tight they were all gone by 8:30. Not long after there was a knock on the family room window letting me know that they had made paths around the house to the chicken house, the woodshed and around the front yard :) The snow is so light and fluffy that they even shovelled half of the driveway and that is no small feat!

There were no snowmen built today because the snow refused to stick together but there was a whole lot of snow angels, sledding, snow eating and the occasional face plant *grin*. All I can say is BRRRR!!! The temperature was around -6 today and with the wind chill it was more like -15 making our little jaunt to the mail boxes down by the main road a little nippy so we really had to do some speed walking to get the old blood pumping and create some internal heat :)

More snow is forecasted for tomorrow so I can just imagine what filled their prayers tonight at bedtime *grin*.

Breaking the Silence :)

I apologize for the radio silence that has creeped up over my blog! I seem to have a bit of blogger's block *grin*. It's been pretty quiet around here since the holiday festivities quieted down and we settled back into a familiar rhythm of homeschooling in the morning, farm chores, making every effort to get outdoors each day to take in the beauty around us and spending time making nourishing meals to warm us now that winter has finally made an appearance with snow and freezing temperatures :)

We've had some lovely visits with our closest friends letting the kids have fun playing together and we even hit the skating rink earlier this week :)

It was the first time my youngest two children had been on skates so they were so excited. L took to it like it was second nature and took off without any instruction or help of an aid to keep her up while my little guy had fun making ice angels in the middle of the rink and getting pushed around wildly in one of the little kiddy cars they had. Afterwards we surprised the kids with a visit to a nearby coffee shop where they got to have hot chocolate to warm up with and us mamas soaked in the warmth from the fireplace :)

This morning I also had a chance to attend a fantastic seminar by Linda Kane an ICAN Certified Neurodevelopmentalist http://www.hope-future.org/ on effective ways to teach children and she shared all sorts of amazing information on the ways the brain develops in children. Really cool stuff that I'll have to share in another blog post :)

Apple Nachos... How have we not met before?!

How is it that I had never heard of apple nachos?!

I was reading one of my new favorite blogs, Manifest Vegan, when I came across a very interesting recipe for a fruity nacho. Hence the apple nacho name.

Apparently this recipe has been around for quite a while and I seriously must be one of the last few people in the blogosphere to hear about it! Basically it's just thin slices of apple, and then I drizzled on a wee bit of organic peanut butter, unsweetened coconut, almond slivers, walnuts and a few chipits for fun :)

In the original recipe I linked to above she uses pecans which would be awesome to and what about a few dried cranberries on there instead of the chipits? I am SO doing that next time!!

What a great snack it made for the children this afternoon when their tummies were growling and it was way to early for supper :) It's pretty healthy right? I guess maybe the chipits aren't LOL.

Okay now be honest... if you have never heard of apple nachos you have to let me know that I'm not the only one that missed out on this fun food idea *grin*.

Goodbye 2011... Hello 2012

Well I guess it's all over... 2011 that is *grin*.

Last night we pulled out a fancy table cloth for the coffee table, covered it with delicious finger foods for our annual new year's eve party and invited my mom and dad to join us :) We had cheese and crackers, hummus and veggie chips, fresh oysters that I breaded and fried, black Alaskan cod which is seriously to die for when you steam it in the oven....

and poached pears in a merlot and grand marnier sauce. I've been wanting to make these for a long time and thought it would make a lovely dessert to eat at the stroke of midnight :) I made a syrupy reduction out of the poaching liquid and then drizzled it over the warm pears and vanilla bean ice cream. So yummy and a lovely way to ring in the new year!

My dad just happens to be a new year's baby as well so today we got to have another party for his birthday with homemade sushi. We made California rolls and others with smoked sockeye salmon, shrimp croissants and my mom made cherry cheesecake for his birthday cake. I think I've eaten enough for an entire week in the last 24 hours LOL.

I'm not one for new year's resolutions usually as I tend to break them but last January I had vowed to live life more intentionally and 2011 lived up to what I had envisioned so I plan to do a whole lot more intentional living in 2012!

But when I read this lovely excerpt below from Ann Voskamp's blog, A Holy Experience a few days ago it just made me say 'YES'!

Holiday Cheer

Our tree finally made it in the house this afternoon and took its place in the family room filling the air with the smell of fresh pine :)

With a bowl of freshly popped popcorn the kids and I got busy stringing long strands of popcorn together for garland...

to be hung along with pretty chocolate balls and candy canes.

It was so pretty this evening as we all sat in the dark with only the glow of the tree to light the room as we celebrated winter solstice and the return of longer days.

I've been promising to share photos of our decorations above our fireplace and the sun came out today and I thought if I don't get some good pictures now we may not get any light again for a while *grin* so here they are :)

I had mentioned a couple of weeks ago that my son was working on making a cardboard 3D silhouette of Rudolph to hang above the fireplace and it turned out fantastic!! I found it originally on pinterest but the link only gave plans for a very small one that you could print on your printer so he drew a larger one freehand and it must be about two and a half feet high filling in the mantle space right to the ceiling.

Another special ornament I made this year was all due to my lovely blog friend Amy who shared about the Finnish Stars she had made out of fabric and I was completely smitten with hers and had to make some of my own. Oh my word do I just love how these turn out and there are quite a few people on my Christmas list getting these this year *grin*.

I used heat 'n bond between my layers of cotton and linen, I'm not sure if she glued hers together this way, but I found that I could stick quite a few portions of each star together with little squares of the heat 'n bond in one swoop of my iron and the glue layers stiffened it up quite nicely :) They are a bit tedious to make like she had mentioned but after the first couple it seemed to move a long a little quicker but now that I've made eight of them I'm glad to be finished LOL.

Beneath the candy canes and finnish stars, rudolph we placed some of our mini gingerbread houses that we made last year and a few decorative trees and called it complete.

I wanted to keep everything really simple this year so the decorations are really minimal, not to many lights or knic knacs and most of what we used we baked, sewed or made from paper aside from a few sugary items. As I strive to personally keep my focus on the calm joy of the season and on family and faith I find it helps to keep all the surrounding noise of excess items to a minimum so I don't get distracted. So far so good *grin*.

Hubby is finally home for the holidays so we all hopped into the truck and headed out into the forest in search of the perfect Christmas tree :)

As we drove we climbed higher and higher up the mountain and our view overlooking the lake below became more beautiful...

and we even found some snow *grin*.

We finally picked the perfect tree and the children each took a turn sawing through its trunk and off home we went with our tannenbaum :) We've set it outside the front door for the night to dry off a bit and tomorrow it will make its way into our family room where we can get it all decorated up just in time for Christmas eve!

Sunday saw us light our fourth candle for advent and you should have heard the squeals of delight as the youngest two realized that we were only days from Christmas :) We made our last trip into the city this morning to pick up a few last minute things we needed and now we're ready to snuggle down in our home for the rest of the holidays.

Hubby is home until the day after boxing day and I couldn't have wished for a better Christmas present! We're all together and what a special time we will have :)

Around the Farm

Thank you everyone for all of the lovely birthday wishes that you sent my way earlier this week :)

We still don't have a drop of snow even though it has tried the last couple of days with the constant grey and drizzle but it looks like we just might be in for a green Christmas! Not that I mind terribly as it makes winter driving much nicer but I know the children are longing for it and just itching to try out their new snow gloves that we just bought. We've got all the appropriate gear now and nowhere to wear it *grin*.

Despite the wet weather we have ventured outdoors to say hello to our baby. Well actually he's really not a baby anymore but he likes to think he is especially with all the ruckus he makes if we don't pay enough attention to him when we're nearby :)

The children collected a good pile of cedar boughs, laurel bush and this lovely cotoneaster for our mantle and it looks and smells so festive in our family room now with it above the fireplace. I've tried numerous times to get a good photo to share with you but it has been so dark and grey that my photos just look terrible so hopefully the sun shows up soon so I can get a good shot *grin*.

We ventured up the mountain behind my mom's house to the look out...

and even spotted a few mushrooms that are still thriving beneath the cedar trees.

I've had a little sack of Kamut grains in the cupboard that my mom had given to me and they have just been waiting to be used in the perfect recipe and yesterday I finally found one! Tasha at Clean Eating Mama shared the most delicious recipe for little Kamut/walnut thumbprint cookies and oh my word they are SO good *grin*. Luckily I had all of the ingredients on hand and we whipped up a double batch so we would have plenty to share on Christmas eve :)

My nutrimill made a beautiful fine flour from the Kamut and it truly is a caramel color when it comes out like she notes in her recipe and such a wonderful flavor. Now I'm going to have to see what else I can make with it! If you have a tried and true Kamut recipe or one you've been eyeing up I'd love to know about it :)

Advent and a Birthday

It's been a busy couple of days :)
We had family visiting from out of town, a special outing to listen to the Christmas choir singing at one of the churches in the city which was such a treat, catching a few last minute craft fairs and a few trips transporting Hubby to and from his tug boat for work.

It's okay though because today was my birthday and I got to sleep in and catch up on some rest and relaxation *grin*. The children made me the cutest little handmade birthday cards and my mom had all of us for cake. A delicious hazelnut torte filled with apricot jam and brushed with Austrian rum... so yummy! So good in fact that it disappeared much to quickly as we sipped our coffee that we had to splurge and have a second slice :)

The days leading up to Christmas eve seem to be zipping by really quickly and I've been working on making a list of all the things that still need to be done. I've been spending an hour each evening working on a few fabric Finnish stars that I want to give to my mom and my mother in-law and the children requested felt dragons earlier in the year after seeing the one I had made for Michaelmas so they have been cut out and are waiting to be sewn...

but when we lit our three candles last night for advent it reminded me of the peace and joy of the season that we are embracing and that I need to focus less again on the hustle and bustle of 'getting it all done' and more on family and togetherness. I found that in the past I get very caught up in doing and this year is all about the enjoying *grin*.

So far I think I'm doing a pretty good job at it and the sparkle in the children's eyes has never been so bright :)

Holiday Fun

Our advent calendar is growing!

Each morning one of the children takes a turn hanging a new little decoration onto our tree limb as we get closer to Christmas eve :)

We're still sprucing up our mantle and today my oldest started working on a 3D silhouette of Rudolph the Reindeer that will have antlers, a red nose and will eventually be hung above the fireplace. I knew I had been hanging onto those large pieces of corrugated cardboard for a reason!

The temperature has fallen below zero and we've had a good perma freeze for the last couple of days so both of the woodstoves have been going 24/7 to keep both ends of our home warm. That means an awful lot of firewood is making its way in and out of the basement and the children have been a HUGE help :) Today all three of them went out to bring more in with big brother filling and rolling the wheelbarrow to the basement window and then the younger ones handing it in to him so that it could be stacked up right away and keep the bark mess off the floor just in case we have a repeat of our flooding again.

I've been watching the newspaper for special Christmas choral preformances that are family friendly and free which is a big perk and this Sunday one of the churches in the city is hosting a Christmas choir and I can't wait. I just love listening to the large choirs sing. So beautiful and only a few more sleeps to go *grin*.

Happy St. Nicholas Day

Oh the joy that filled our house this morning as sleepy children raced to the front door to see what Saint Nicholas had left in their shoes!

Waiting for each of them was a little burlap sack and a brown paper bundle tied with string.

There was a special Christmas book enclosed for each of them and all sorts of nuts and oranges to eat along with a delicious chocolate St. Nicholas for later :)

We made Nicholas shaped cookies using this speculaas recipe which is so yummy with its ground almonds in the dough and lots of spice and the children had fun decorating him with raisins, chocolate chips and sunflower seeds :)

One of the things that we really wanted to do was pack a little tin full and surprise someone with it in secret but since our closest neighbor is my mother we thought it would be fun to see if we could get away with dropping it off at her door and not getting caught!

So with the cookie tin in hand all three of the children raced up to her house as fast as they could and then snuck as quietly as they could to the door, banged on it hard and then ran for their lives LOL.

A few minutes later the phone rang of course asking if it had been us and we denied it *grin*. She had no idea where they had come from so it was a very successful ding dong ditch LOL.

St. Nicholas Eve & The Krampus

Today we spent some time drawing in our lesson books little pictures of Saint Nicholas as we wait for his arrival tonight :)

Every year on December 5th Saint Nicholas returns to earth on his white horse and visits the homes of children leaving them gifts in their shoes that have been set out by the door.

When I was a little girl my father would tell us tales of St. Nicholas from when he was a little boy in Austria and of how St. Nicholas would visit their house in the evening and occasionally with him came the Krampus. A devil like beast with chains that would chase them around if they were found to have been bad until they promised that they would behave better from then on. Of course the chase was frightening but if they promised to be good they were rewarded with treats from St. Nicholas :)

Now the Krampus never visited us thank goodness but that definitely puts a new spin on the old 'you better watch out, you better be good' saying for old Santa Claus. If I knew the scary man with the chains was coming I would have been on my best behavior a lot more *grin*.

So with their shoes out, filled with carrots for for St. Nicholas' horse and a little note, the children all went to bed dreaming of what surprise they will find in the morning :)

Advent and Love

Tonight we lit two candles for advent starting with the one we lit last week and then the lighting of a second one to symbolize love and family. We spent the entire day reading Christmas books, baking and just enjoying one anothers company. I couldn't help but think how blessed I am to have three beautiful children and how homeschooling allows us to spend so much time together :)

Rudolph Steiner incorporates the four kingdoms into the four weeks of advent and for the second week he shares:

“The second light of Advent is the light of plants–
Plants that reach up to the sun and in the breezes dance.”

So this week we will plant our paper whites which I have been sprouting in the dark pantry and we will gather and bring in pinecones along with some fresh cedar boughs from the cedar tree in the back yard. I can't wait. They are going to smell so good!

Our nativity set has made its way to our table as well and the children have been happily arranging and rearranging all of the figures. This week we will have an empty barn and manger and the angels singing but for now I'm letting everyone have a little play time *grin*.

One of the lovely ideas in our Celebrate the Joy holiday book is the filling of an empty manger all month long with bits of straw, string and what not so the kids built a little manger out of popsicle sticks and I found a bunch of natural colored raffia that looks like hay for them to cut and place inside of it. Each morning they pull a little bit out of the top of the mason jar, snip it off and then put it in our manger. By the 24th it should be overflowing and ready for our little baby Jesus to be placed within :)

Counting Down

The magic of the Christmas season is building at our home :)

Yesterday I bundled up the children, grabbed a hand saw and we all headed out for a little trek in the frosty fresh air. I love to keep everything a secret so they had no idea what their mama was up to except that I needed them to spot a nice thick tree limb that we could cut down for something special *grin*. When they finally decided that a nearby maple tree had the nicest limbs, my oldest cut off one for us to bring indoors.

You can just imagine the puzzled looks on their faces when I proceeded to hang it up with a couple of ribbons below the mantle over our fireplace....

but it all started to make sense when I pulled out the very first little felt decoration with a number one on it for them to hang :)

The maple limb is going to hold each of our little stuffed creations that make up our advent calendar this year :)

In previous years we have occasionally had those store bought calendars where the doors pop open to reveal a little chocolate and some really sweet paper ones with Christmas scenes beneath each little flap but this time I wanted to use one that we made ourselves.

The children helped sew and stuff some of the decorations and others I made after they went to bed so they would be a surprise and to number each of the decorations I needle felted the numbers onto the fronts of each one free hand using some pretty colored corriedale rovings that I have. I can't wait until a few more days have passed to see them start to line up all down the maple limb :)

I don't think I have been this excited about the holidays in quite a few years and I have quite a list of little crafts to make and special outings to take each day with the children as we grow nearer to the 24th :)

Our favorite Christmas books have been pulled from the shelves and placed within easy reach with more coming that I've ordered from the library and I pulled out the pretty linen with its red Scandinavian border in the above photo from my special stash for sewing a table runner to be placed on the coffee table beneath our advent candle holder and manger scene. The mantle is ready for fresh greenery and paper snowflakes and soon I think our tree will make an appearance to *grin*.

First Candle of Advent

We may not have been home for the first day of advent but that didn't stop us from lighting the first candle :)

Sunday happened to be the day we were stranded at my mom's house during our flooding but she has the very same advent candle holder or Aadventsleuchter as me so during dinnertime we set it on the table and lit the first candle starting our journey of filling our hearts with the joy of the season and getting ready for baby Jesus' birthday :)

Over the past several years I have slowly been moving our family further away from the hub bub of purchasing mass amounts of unnecessary gifts and the focus on santa and what he is going to bring us. Instead of all that we think of all the good deeds we can do for others during the holiday season and what special handmade gifts we can make for one another. One of the books that I love to pull out for inspiration on scriptures to read, craft ideas and ways to make Christmas even more special is Celebrate with Joy by Sondra Burnett. I've had it for a quite a few years and while I've read it over and over many times I always find something new to add to our festivities :)

This year I thought it would be fun to make our own advent countdown calendar since everyone is old enough now to wield a needle and thread *grin*. I've been cutting out little felt hearts, stars, gingerbread men, trees and more and we've been stitching them together and filling them with a bit of wool stuffing every afternoon. I have a few more that I'm going to finish up tomorrow and we'll have them all ready for the first of December.

In the coming days I'm looking forward to sharing stories with the children about St. Nicholas to and how he gave selflessly to others without any expectation of receiving something in return and I have a big baking party in the works. Every December there is a seniors dinner at our community hall that is open for everyone to come down and enjoy and if you are home bound you can also have a meal delivered right to your door. How great is that! So I thought it would be fun for us to bake cookies for the dessert portion of the meal that can be taken home and enjoyed later and it is something that even my 5 year old can do and feel really proud of himself for helping with :)

I just love this time of the year *grin*. I just pulled out my stash of hot cocoa and am looking forward to crafting and sipping it in front of the fire with the children. They don't know it yet but I'm going to set aside a few special nights for each of them to spend some one on one gift making time with me to so that if any of them needs help finishing or making a gift they can do that after the others have gone to bed. What child doesn't love staying up later to work on secret projects :)

Flooding Again

Seems like all I've been doing lately is talk about the weather and today is going to be no exception *grin*.

Yesterday morning when I rolled out of bed just before 8am we went into full on evacuation mode around here as the water started to creep up over the irrigation ditches around our home and into the fields. I was hoping we were going to make it through this year without any flooding but I must have thought it aloud and jinxed myself!

Hubby is busy working up north gathering a log tow up at the head of Knight's Inlet so it was just the kids and I and I wasn't feeling up to staying home alone as the water surrounded us and started to poor into the basement so we started packing. My mom lives next door on higher ground so we gathered clothing, food, toys and crafts to keep us busy, lifted up some of the books that were on the floor along with picture boxes and the computer tower and then I flicked off the main breaker to the house cutting off all electricity in preparation for a lot of water.

We made it down the road that connects between our homes just in time. Only a short while later it was already at least 3 feet deep and I know just how cold that water is when you have to wade through it :(

We were safe and dry but it's not exactly fun to stand on the other side of a brown and raging river and watch it creep closer and closer to your house.

My dad had moved the cow up to higher ground by our chickens so that it would be safe and the girls lost all of their yard to the brown deluge but they were safe and dry as they looked out their door :)

High tide came just as darkness was settling in and we checked the water levels once more before turning in while willing our thoughts to happier things like working on our advent :)

When I woke up this morning the water was gone again just as quickly it seemed as it had come and we found what remained of the four feet of water that had made its way inside our house. My oldest son and my dad pumped out what was left and dry firewood was brought in to try and dry out the woodstove so that I could get the house warm again and tonight we're all tucked back into our own beds again.

Despite all of the sloshing around in my gumboots I'm still doing in the basement it could have been worse and I am so thankful that we are all safe and forging ahead like it never happened. Now I just hope it doesn't do it again at least for a little while *grin*.

Storm Watching & Video

We had storm warnings all along the east coast of the island today with winds reaching upwards of 90 km/hour at its peak, ferries between us and the mainland were cancelled and poor Hubby and the kids spent the whole day without power. Lucky me I was further down island where the power was still on *grin*.

On the way home I stopped to catch some of the action after the wind had slowed down a bit but the waves still towered way above me as they crashed over the sea wall in Qualicum this evening. I managed to stay dry but at there were a couple of times where I thought I was going to be soaked for sure as the water rushed upwards in front of me :)

I took a little bit of video on my camera while I was there to share to :) It's only about 10 seconds long but really cool to see how the water just rockets along the wall as it hits. If you are reading this via email or google reader you might have to jump over to my blog to see it :)

Gingerbread Snack Mat

With the snow falling outside and the cold temperatures I've been feeling really festive which is perfect because I have some holiday sewing that needs my attention *grin*.

I started going through my holiday christmas fabrics and found an adorable charm pack of Kate Spain's 12 Days of Christmas and a bunch of other scraps and started cutting little 2.5 inch squares to make a cute quilted border for a set of gingerbread men snack mats I've been wanting to make. With all of my squares cut I sewed strips of 5 blocks together using a quarter inch seam and then sewed it onto a 6.5 x 10.25 inch rectangle of natural unbleached muslin.

I can't claim this idea as my own though as I actually saw a photo of it on Flickr first but for the life of me I can't find it again to share a link to the original. So if you know who created this first I would love to know so I can give them credit :)

Then with a little paper gingerbread man that I had traced from a cookie cutter I copied him over and over onto the backing of my Heat N' Bond ultrahold that was going to be my glue for my applique work. This stuff is great for quick and easy applique projects :) Just iron it onto your fabric, cut and place it on your project and iron once more for a secure stick.

I love the natural look of the muslin and wanted to incorporate burlap into my mats to but burlap tends to unravel if it isn't stitched down well and washing can be tricky but I was crossing my fingers that the heat n' bond would do the trick. So I did a little test patch taking a chunk of burlap, gluing it onto some scrap cotton and it stuck on like a hot damn. Oh my goodness, that burlap is not going to move!

So with all of my little men positioned on my snack mat tops I took a dry iron to them and set them permanently in place. Just to be on the safe side I did topstitch all of them though so that they would make it through a round or ten in the washing machine *grin*.

With the addition of a little bit of adorably cute mini ric rac for their icing they were complete and ready to be sandwiched between a layer of organic wool batting and an 8.5 x 10.25 inch rectangle of muslin that created the backing to my snack mat. Using a 1/4 inch seam I stitched all around the outside leaving roughly a 3 inch opening at the bottom so that I could turn the whole thing right side out to be pressed and finished off with a topstitch all around the perimeter :)

I just love how they turned out and can't wait to make a few more because these ones were actually destined for a seasonal swap the kids and I participate in and are already wrapped up and on their way down to the US where they will be swapped around with other wonderful goodies and in return we will have a new little box full of all sorts of homemade goodness just in time for the holidays. I can't wait :)

Christmas Scherenschnitte

I've been having fun making some holiday paper cuts using japanese linen paper. I just love that stuff :)

So far I've got the three wise men, some holly and candles...

Angels singing and of course Mary, Joseph and baby Jesus.

I haven't done any paper cutting in over a year and have somehow misplaced my nice little craft knife so I had to use a honking huge exacto knife but I'm very happy with how they turned out :)

The next step is to turn them into window transparencies using velum and kite paper to paint color into the open spaces. That way when the sun shines through them they are going to look amazing. I can't wait!

Snow & Winter Storms

Wind storms, power outages and snow are back as winter creeps closer :)

On our way into the city for swimming lessons this morning I creeped along through slush and a mini blizzard for nearly an hour before it finally turned to rain again. Thank goodness we were behind the snow plow for part of the way so that we had a somewhat clear lane. I am so envious of those of you who have squeaky dry snow for traveling on. It seriously makes such a big difference *grin*. If hubby could run his tugboats on the prairie I think I'd head eastwards LOL.

As we traveled further south the snow and slush disappeared and the white gave way to dark gray clouds, wild wind and waves.

We stopped at one of the rest stops and joined in with some other storm watchers to snap a few photos but we weren't brave enough to actually exit the car to catch the perfect shot of the waves though. We barely managed to keep the window down as the rain blew in sideways and soaked us immediately LOL.

It was beautiful to watch the waves crash against the beach spraying water and sea foam into the air and we managed to miss the power outage that was going on at home to :)

Martinmas Lantern Walk

This was our very first year celebrating Martinmas and had a lot of fun creating special lanterns for our lantern walk :)

We started by heading outdoors during a break in the rain showers we've been having and collected red japanese maple leaves, deep purple leaves from a smoke tree, yellow leaves from some of the phlox in the yard and then started to paper mache our balloons with a drippy mix of flour and water for the glue and strips of crepe paper :)

The first layer was just paper mache and then we placed our leaves on top in patterns and just randomly and then covered them with one more layer of paper mache to help them stay in place without worrying that they would start to lift or fall off. I don't have any photos of us actually doing the paper mache because I was right in there with the kids slopping paste and paper on my own balloon *grin*.

We left them to dry overnight by the fire and in the morning the balloons had started shrinking and were pulling away from the sides of the paper...

leaving us with great big giant bowls that I punched 4 holes into around the top and then tied strings onto them for hanging :)

The children wore their cloaks pretending to be like St. Martin in his cape when he came upon the freezing man outside the city gates and then we headed out into the darkness. I retold them them story of Martin and the poor man that I used from Melisa's blog and we sang the following song from out of my Autumn Wynstone Press booklet :)

The sunlight fast is dwindling,
My little lamp needs kindling.
Its beam shines far in darkest night,
Dear Lantern, guard me with your light.

We had so much fun walking with our lanterns glowing in the dark. Although I think next time we might do it a little earlier as when it gets dark around here it is pitch black and there isn't a street light in sight for a great many miles. I had to keep myself from thinking of bears and other wild animals that love to lurk in the dark around here LOL.

I just love how they glow so brightly showing the silhouettes of their leaves through the paper mache. We've brought them into our family room and hung them by the window so that we can enjoy them in the evenings with the flicker of candle light dancing from within them :)

Fall Tree Art Fun

The weather has been absolutely miserable here for the last week so we've been bringing the outdoors in and we tried making some of the fall trees I saw over at the artist woman using watercolors, acrylic paint, straws and pointillism :)

Remember a couple of days ago I had mentioned I was going to let the kids blow paint through straws and cross my fingers that it didn't end up splattered all over the walls? Well it all turned out good and boy was it fun!! If you take some regular acrylic paint and thin it out with tap water to a runny ink like consistency you can actually drop it onto your paper in a blob and blow it all across your page to create tree trunk forms :)It's really cool to watch it streak along and branch off in different directions. The key we found to nice smooth branches was to make sure that we didn't drag our straw along through the paint as we blew. This made the shapes thicker and more blobby. And of course try not to drool through the straw as you blow LOL.

After we let our tree trunks dry we randomly dotted fall colors using q-tips to our branches creating fun fall colors :)

They're going to look great hanging on the wall when they're all dry :)

Yarn Along ~ Lichen Kerchief

A post of my current read and what is cast on my needles ~ Inspired by Ginny over at {Small Things}

I've been pretty busy at my sewing machine the last couple of weeks so I'm so happy I finally have some more knitting to show you all after missing last week's yarn along :)

This pretty mauve cotton/linen blend yarn by Linsey has been in my stash but I hadn't used yet because it's more coarse and stiff than what I would usually knit with but I just love the color and while I was having a peak at what all my ravelry friends had hearted in the last little while I came across the Lichen Kerchief pattern that is perfect for my little girl :) You've got to LOVE ravelry!

I apologize for the dark photo of my knitting but I've been spending the last couple evenings knitting by the fire keeping nice and warm :) I just love to listen to it snap and crackle and its warmth is so welcome now that we have been freezing off and on outside at night. The kerchief has a neat little pattern of v-shapes interspersed throughout it using a simple twisted stitch and I think I'll probably get it finished up tonight and get the buttons on it sometime in the next couple of days so she can start using it. I'm in between books this week so no photo to share but I have a couple good ones, The China Study & Hunger Games, requested through the library so I hope they arrive soon :)

I can't wait to see how this kerchief fits and what you all have been knitting this week!

Painting & Knitting

Underneath the tablecloth on my kitchen table is a permanent patch of butcher's paper securely taped down. Why you might ask? So that when the painting bug strikes my children which is quite often this mama can just whip off the cloth and and let them go wild without worrying about how I'm going to fix water marks and paint stains *grin*.

I seriously love this stuff! And it's pretty much indestructible :) If you have never used it there is one side made of brown craft paper which makes great wrapping paper that you can stamp and draw on and on the other side it has a water proof waxy coating that you can spill on, paint on, get marker all over and wash it all up with soap and water when you're finished :)

Today they were painting the backgrounds for a fun fall tree picture that will have them blowing paint through a straw tomorrow to make free form tree trunks and then we'll add colorful leaves using our pencil eraser ends. I just hope we can keep the paint from blowing out of the straws and onto the walls! Maybe we should to some practice breathing through the straws before I actually hand over the paint LOL.

While they happily painted away I pulled out my yarn swift and a couple of skeins of a pretty mauve colored cotton/linen blend of yarn that I've had put away for a rainy day :)

I think I've found the perfect project for it but you'll have to wait until tomorrow's yarn along post to learn more about it *grin*. Gotta love ravelry and free patterns!

NaNoWriMo Is In Full Swing

The novel writing bug has bitten all three of my children this year and each one of them has taken on the personal challenge to compete in the National Novel Writing Month (NaNoWriMo).

My oldest son is creating a sci-fi story full of aliens and spaces ships and has set his word count at 12000 words total. He's been spending the first couple hours of each morning so far writing furiously as he works towards his goal of 400 words a day. He isn't a huge fan of writing stories so when he shows me the four pages of double spaced writing it takes him to get there I can't help but smile from ear to ear and cheer him on :)

I know that he's going to need a lot of cheering as he reaches the middle of the month and starts to feel tired of all the writing but he has both his younger brother and sister to keep him going to. They are in a bit of competition with him *grin*. Their word goals are much lower resulting in lower word counts for their days and they have been surpassing their numbers at least three fold and it really bugs big brother that their word graphs on their NaNoWriMo pages are way higher than his LOL.

Happy Halloween

Today was party day around here as we celebrated Hubby's birthday and had our Halloween party full of ghoulish foods :) There was monster mouths, rotten cheese logs and pumpkin vomit (homemade guacamole flowing out of my mini pumpkins mouth).

The Zombie intestines which were a huge hit! I love how these turned out and they are just puff pastry filled with sausage meat, a little pizza sauce and then some fake blood to really make them fun :) I found the recipe here.

And my grand finale of brains *grin*.
These were so easy to make with icing, cake and raspberry jam. I found the recipe here and the great labels for the top to with little sayings like 'Brains... they do a body good' and 'Brains... never hurts to have extra'. So fun!

Every year I treat the kids to special Halloween candy apples and we go to the Rocky Mountain Chocolate factory in the city where they have a giant display case full of candy apples with funny faces :)

They have giant granny smith apples in the centers and are so good. All that apple must counteract the sugar, right? LOL

After dinner we headed outside to let off some fireworks...

and then have cake to celebrate Hubby's birthday.

Halloween Fun and Sewing

The Halloween fun was in full swing here today :)

I had been putting off carving the pumpkins we had picked because we have a rogue bear on our property again right now and I didn't want to take a chance that we would carve them and he would eat them! But with Halloween already tomorrow we couldn't wait any longer so I set up an outdoor carving station for the children this year :) We dragged out a couple of saw horses and an old table top I keep for crafting and put them in the backyard where they could muck about as they cleaned their pumpkins, making as much mess as they like and I didn't have to worry about it getting stuck to the kitchen carpet *grin*.

So much ooey gooey fun!

While they scooped I picked out all of the seeds. I can't wait to roast them tomorrow in the oven with a little bit of sea salt and olive oil. Yummy.

With all of the messy scooping finished we moved back indoors where it was much warmer and finished carving their faces. I can't help but giggle every time I see this one that my 5 year old did :) Those eyes are hilarious! I can't wait to show you the one my oldest son did this year to, but he has asked me to wait as it's surprise for the rest of our family and he doesn't want to take a chance that someone will see it on here ahead of time :)

A couple of years ago we started making Halloween gingerbread houses and they are so much fun to build. Who says gingerbread is only for Christmas!

Of course you can never have enough candy corn for this sort of project. Just don't eat to many of them. Those little triangles of sugar are SO sweet. I had to count out just a few for each of the children or I knew they would free range in the bowl and I didn't want them to eat to many :)

After all the pasting of the icing, sticking gum drops, licking fingers and squabbling over who used to many sprinkles we had one great Halloween house.

All three of my children asked for hooded cloaks this year so I spent most of today repurposing old fabric that we found at the salvation army into hooded cloaks :) We don't go out trick or treating but we do like to dress up so usually I just go and buy them some fun costumes after Halloween is over and they are on super discount but this year they wanted to dress up for our party so mama had some sewing to do.

All of the pieces of fabric were different sizes and weights and I didn't have a pattern so we did a lot of cutting and measuring while each one laid on top of their material *grin*. I just love this heavy brocade with it's greens and golds that L picked out. It is heavy and silky and it just seemed like the perfect material for a cloak. Unfortunately there wasn't quite enough to make it ankle length but I think it turned out well just below the knee :)

And I love the hood! Oh my, I think I need one to *grin*. Her tiny head just gets swallowed up in it as she peers out and she loves it :)

I had hoped to get some of my party food prepared today but no such luck :) So tomorrow I will be a slave to the kitchen until time to unveil my horrific creations LOL. What are you doing for Halloween?

Pumpkin Hunting

Every fall we all load up into the car and make the trip to Shamrock Farm so that the children can run through clusters of pumpkins still out in the field until they find the perfect one. Usually it's bigger than I would like but I can never say no *grin*.

This year the little guy wanted to be fully in charge of the wagon so he huffed and puffed but kept tugging on that wagon full of pumpkins as it weaved and bobbed behind him over the uneven hills of dirt in the pumpkin patch. He was beaming from ear to ear as he made each stop to load in another orange treasure :)

By the time he made the last stop he was more than ready to squeeze in anywhere he could fit and let big brother take a turn pulling the wagon and him back to the barn.

Not only do they have the best pumpkin patch but inside their barn it is always decorated for the kids to. There are pumpkins from floor to ceiling, some real, some decorative, flying witches, hairy spiders and the above nook with creepy creaking noises, chairs that rock on their own, cauldrons that smoke and more *grin*. Talk about fun!

Before we left the children took turns running through a little hay maze they had outside with tunnels and little nooks to crawl through...

and of course we had to check out the chickens to :)

We always have a family party on Halloween since it is Hubby's birthday also so I've been busy planning a ghoulish feast *grin*. This year's menu will include brains and intestines and possibly some pumpkin vomit! Want to come? I promise it will all taste good LOL.

Our Fall Garden...

is growing strong :)

It is such a treat to pull open my creaking and quite visibly crooked garden gate with my kitchen bowl in one hand and a the warm fingers of my little one in the other as we tromp together through the weeds and grass that have now taken over the paths between the rows and search for the delicious treats that are waiting beneath their coverings.

We have been enjoying the extra beets I planted this summer immensely! Oh my goodness are they yummy. All of the children love them so I've been boiling them up by the pot full for our dinners and eating the leftovers cold in salads and the turnips are a special treat for me :)

The cold weather has begun here and the temperatures have been dropping to just above freezing or slightly below at night. The perfect temperatures to sweeten them up just right. Who new one could get so giddy over vegetables *grin*.

Along with the vegetables there are a few flowers and herbs still thriving. One of my favorite herbs is my Mullein (verbasacum) with it's giant fuzzy leaves and towering spears of little yellow flowers reaching for the sky. The kids love to pick the leaves and rub them on their cheeks as they are just as soft as a bunnies ear :)

They are a wonderful herb for coughs and asthma to. The leaves and flowers contain mucilage which can be very helpful in soothing coughs and acting as an anti-inflammatory for the lungs. I myself make a tea from the dried leaves and flowers and drink it to help with my own asthma :) Another wonderful thing to make with it is to make an oil with the flowers to treat earaches. So many wonderful uses and it self sews rapidly providing fuzzy leaves the first year and flower spears the second year :)

Yarn Along ~ Bambino

A post of my current read and what is cast on my needles ~ Inspired by Ginny over at {Small Things}

I am so in love with this little baby sock pattern :)

I had to temporarily put down the baby sweater I was knitting as I'm missing the necessary circular needle for the next step so in the meantime I decided to use up the leftover yarn from the shawl I finished last week and make a pair of these adorable socks.

There's just something about sock knitting that is so darn addictive! For me it's when I get to the heel, working the rows and watching as the cup of the heel emerges. From that point on I just can't put down my needles as I can't wait to see how it all comes together *grin*. This particular sock had something new to me. The heel and toe were both constructed from the same identical 'short row' stitch pattern and then as the toe flipped up it was finished off with the coolest zig zag stitch of slipped knits and purls to create the finished seam across the toes in the above photo. There is absolutely no bulk inside the sock to bother delicate little baby tootsies *grin*.

The only tricky part I found was getting used to the little size 0 DPN's. Those suckers are tiny!! They flexed quite a bit as I knit and I was a little worried that I would snap them but it all worked out great and I've just about finished up the second sock so that I can go back to my little baby sweater for next week :) I'm still reading Deeply Rooted to. I just haven't had enough time to read this week and I'm dying to find out how it ends!

Fish Hatchery Field Trip

Each year I try to set up or make sure we join in some fun field trips being offered to homeschoolers here on the island and thought it would be fun to organize a trip out to a nearby fish hatchery this year.

There were about 30 of us total and the children got to watch the harvesting of salmon roe (eggs)...

and the milt (sperm) from the male salmon.

Salmon roe are incredibly hardy little rubbery feeling balls and can handle quite a bit of touching so the kids all got to hold some and name them :) The little black spots are their eyes and in the incubation room above were trays and trays of mixed salmon roe and milt waiting to hatch and turn into little Alevin in about 3 months.

When we were finished in the incubation room we had a chance to watch some of the workers taking samples from some of the salmon. They do this randomly and they were taking a piece of the liver from this fish to be sent to Nanaimo for analysis.

Did you know that hatchery fish don't have dorsal fins?

I actually didn't know this but when the young salmon they raise at the hatchery are released into the rivers and streams they have had their dorsal fins removed so that they can easily be identified when they are adults. The above salmon is a wild salmon and you can see that its dorsal fin is still intact :)

As we finished up our tour we all headed down to the river to watch some of the salmon that were spawning right outside the hatchery naturally and came upon a black bear that had come to check out the salmon as well.

He wasn't there purely as a spectator though...

and minutes later he had snatched up one of the salmon and proceeded to take it into the forest for a little afternoon snack *grin*. I guess it was good that we were on the other side of the river when it happened but unfortunately I couldn't get a clear shot of him without all of the fencing in the way. Still very cool for the kids to watch :)

Breathing in Beauty

Being by the ocean has to be my most favorite spot to be :)
Yesterday I had one of those rare moments when it was just me, myself and I so instead of catching up on housework that I probably should have been doing I surrendered to the call of the ocean *grin*.

I took my mom with me, a steaming hot cup of coffee, my camera and we just sat and sucked in the beauty around us. Can you truly ever tire of the sound of the waves lapping at the wooden pilings under the wharf, the smell of salt and seaweed or the brisk wind that blows stray wisps of hair around?

When we arrived we were blanketed in a thick bank of fog but as it rolled further away we were greeted by the passing splashes of a pod of dolphins and the cries of the gulls as they soared along the air currents.

The surrounding mountains and islands appeared again...

and the tug boats and fishing vessels became more than just moving gray shadows and echoes of diesel engines.

Definitely a truly wonderful way to spend an afternoon :) How about you, where is your favorite place to relax and breathe in beauty?

Shawlette Success ~ Yarn Along

A post of my current read and what is cast on my needles ~ Inspired by Ginny over at {Small Things}

I just loved knitting this little shawlette.
It was amazingly easy and a great little foray into the world of lace knitting and it knit up so quickly :)

I haven't blocked it yet and I'm having second thoughts as to whether or not I actually want to. I sort of like the rippling wave along the bottom where the lace pattern is. What do you think?

I was also going to give it to my daughter right away but now I think I may keep it as a gift for christmas *grin*. So much indecision LOL. We were in the little yarn shop in the city together the other day and she was fawning over pretty little shawl pins and I thought it might be special to buy a nice pin for her and give it all as a gift. Oh and that is my little guy in the photos :) I paid him a quarter to model it for me and to keep it a super secret *grin*.

Now that I'm falling back into my knitting groove I wanted to get another project on my needles right away and I've chose a little baby sweater called the Tummy Warmer and it has the most adorable little honeycomb stitch in it that my grandmother used to knit all the time. I'm going to put it away for when my sister has her baby in the spring. I don't know if it will be a girl but I'm going with pink anyways because I couldn't pass up this soft baby alpaca yarn :)

The owner of the yarn shop in the city that I go to must find me quite amusing to watch as I shop for yarn. I never have a specific yarn in mind when I go in so she can never really help me find anything and I don't shop by color either. I actually go around and around petting all the wool LOL. Yes, I really did say petting and when I finally find one that feels the best I pick a color. Strange I know but it works for me *grin*.

This week my book is Deeply Rooted: Unconventional Farmers in the Age of Agribusiness by Lisa M. Hamilton and I can't put it down so far. The author writes about 3 farmers that are incredibly small scale in relation to todays super farms but they choose to stay the way they are. Her writing paints a picture in my minds eye so vividly that I swear I could nearly smell the cow manure LOL.

I can't wait to finish reading it and I'm looking forward to seeing what you all are knitting this week!

Knitting Lace ~ Yarn Along

Let the fall knitting begin!
I'm so excited to join in with Ginny's yarn along again. With all of the chores that needed attention around here in the spring, sadly I had to put away my knitting needles but I've dusted them off and have cast on a little girl's shawl for my daughter :)

I've been dying to try knitting some lace and the Little House Shawl pattern looks like it's going to be just the right size to see if it is going to be difficult. I have to say though that so far this is EASY!! The hardest part was casting on the 395 stitches without loosing count *grin*.

Our homeschool year is in full swing and I think I've finally found a rhythm that works for me and all three of my children as my youngest has joined us for kindergarten this year and I just love his exuberance each morning as he begs to get started :) I'm using Oak Meadow with him and we have been enjoying reading the Waldorf Alphabet by Famke Zonneveld and starting our own alphabet book together. Oh how I love starting kindergarten all over again :)

Can't wait to catch up with all of you again and see what's on your needles this week!

Fall Leaf Sugar Cookies

We are spending a lot of our days embracing the beauty of fall around here lately as we watch the leaves on the trees transition to their vibrant autumn colors and we happily jump on their crunchy counterparts that litter the lanes :) The children keep bringing in handfuls of stray leaves to that they just couldn't resist because they were 'to pretty' and I keep picking up crumbled bits off of the tile floor beneath our nature table as they fall apart from all of the handling *grin*.

So when I saw a photo of some great fall leaf cookies on the Country Living website I just had to bake some with the kids. The only problem was there was no recipe so I made a batch of my favorite sugar cookie dough that I use all the time and thought I'd share it with you to. It makes a nice sized batch of dough for tons of fun :)

4 eggs
2 cup sugar
2 cup unsalted butter

Cream the butter and sugar together. Add one egg at a time and beat really well until the butter mixture is super light and fluffy.

1 tsp. baking powder
5 cups all purpose flour

Add the flour and baking powder to the butter mixture and mix just until combined. Once you've got it all combined divide your dough into four chunks. Don't worry about being completely accurate, just eyeball it up.

Now color each of your dough balls a different fall color :) I really like to use Wilton Gel colors. They create gorgeous vibrant colors and they are cleaner to work with than the old drip style liquid food coloring. You can find them at most grocery stores and walmart.

After you have finished adding your food coloring, wrap each piece in a bit of saran wrap and place in the fridge for about 20 minutes so that dough firms up and makes it easy for rolling later :) Roll out your dough on a floured counter top and bake in a pre-heated oven at 350 degrees Fahrenheit for 10 - 12 minutes or until just starting to brown and firm up around the edges and the centers are slightly puffed up.

I set the kitchen up with three work stations so that each of the children had their own rolling pin, cookie cutters and assortment of colors and they had fun ripping off chunks of color and creating their own fall color palette :)

It actually turned into a color blending lesson on top of the baking fun as we watched the colors meld together creating new tones of oranges and greens and the surprise arrival of brown each time we balled up our dough scraps and rolled them out again. Things got quite psychedelic LOL.

So much yummy fall fun. I can see we're going to have a lot of tea parties in the coming days *grin*.

Celebrating Michaelmas

On thursday we celebrated our very first Michaelmas :)
I had found a great pattern and had been secretly cutting and stitching together a little wool dragon each night after the kids were in bed that would be perfect for our little playmobil Sir George to battle. I finished it up just in time and set it up on our nature table for them to find in the morning when they awoke.

Of course they beat me out of bed and I could hear them gathering excitedly around the Michaelmas scene when they got up and then the quiet that followed as they discovered the little coloring pages of a knight fighting a dragon that I had left on their tables for them to color. It was perfect. I had a few minutes to catch up on what I had to do to get the day started and they had fun picking their favorite colors for their dragons :)

After lunch we took some time to read a little story about Sir George and the Dragon. There seem to be a lot of different versions of Michaelmas stories from St. Michael hurling the dragon (lucifer) from heaven to Sir George slaying the dragon and our gentler version that I decided to go with of a dragon that had the hiccups and the gnomes that called on Sir George to help them solve their problem of a pesky fire breathing dragon. In the end our dragon became the bread maker and I thought it was a perfect fit for my 5 year old :) It came from a copy of Before the Journey that I purchased last year.

With our story fresh in our minds and the anticipation of a fire breathing bread maker we went into the kitchen to make some green bread dough together to shape our dragon out of :)

They added gnarly toenails with pumpkin seeds...

poked in spines made of almonds and we cut in scales with a knife that puffed up and gave him a great lumpy body. Oh boy did he taste good with dinner, although there is something very odd about eating green bread. It just feels weird *grin*.

I can't wait until next year so that we can do it again and maybe add in some more fun ideas that I've seen around the web. One great post with lots of links is over at Rockin' Granola but if you google Michaelmas you will find tons of inspiration!

In case you would like to try my bread recipe I thought I would share it with you. It makes awesome soft white buns if you want a non green or dragonish version for another day LOL.

1/2 cup water
1/2 cup milk
1/2 cup unsalted butter
1 egg
a dribble of maple syrup
2 1/2 tsp. yeast
3 1/2 cups unbleached flour
green food coloring optional

Heat your milk and water until it is nice and warm, pour it into your mixing bowl along with your maple syrup, sprinkle your yeast over the water/milk and allow it to proof for about 10 minutes until nice and bubbly. Add your melted butter, egg, and 1 cup of flour and mix. I like to do this to break up my egg nicely before adding the rest of the flour. Now add in your remaining 2 1/2 cups of flour and mix until it forms a ball that you can turn out onto your counter to knead. Knead for about 5-8 minutes until nice and soft and smooth. Cover and allow it to rest until doubled in size. Punch down your dough after it rises and you can now shape it into your dragon, rolls or whatever you would like to use it for :)
Bake at 425 Fahrenheit for 15-20 minutes or until nice and golden and sounds hollow when you tap on it.

Recovering

Okay time to break the radio silence that has engulfed my blog! *grin*

My keyboard feels foreign beneath my fingertips after all this time away. It's like riding a bike though, you never forget right? Plus I have SO many photos that I have wanted to share but just haven't been able to get here to post them :)

I guess it was probably a few days after my last blog entry on my homemade rhubarb juice back in June when I suddenly became seriously ill. At first I thought I had just caught a really nasty bug but when my one leg turned flaming red and swelled up three times it size and felt like it was on fire I knew something was terribly wrong. I was in and out of the hospital ER for a week getting IV antibiotics while they tried to figure out what had happened but when all the tests came back normal they ended up telling me that they figured I had been bitten by a spider.

Okay I can go with spider bite but my leg didn't go fully back to normal and I just didn't feel like myself. A lot of the time it was all I could do to get through the day without dropping from exhaustion and sitting at the computer was painful for my leg so the summer was spent unplugged which I must say was really nice :) When Hubby was home from work we did a lot of camping and I lounged beside the lake with my feet up while he took care of everything. He's so good to me *grin*.

It probably was mid August before I started feeling more energy and like my old self again and I thought, yay, it's finally over.... I was mistaken.

We were out camping at one of the forestry lakes about an hour from the city at the beginning of this month when I woke up one night shaking and having uncontrollable spasms. I felt like I was going to have a seizure and I could hardly talk. I woke up Hubby and he said we had to go to the emergency room immediately. The kids were sleeping but thankfully one of our friends and his son had came out that day to join us camping so we woke him up at 2:30 am to come over and sleep in our camper so that we could leave the kids behind.

The ride just to get back to the highway seemed impossibly long. I think Hubby thought I wasn't going to make it and we were so far from help. There is absolutely no cell service anywhere around here so he couldn't even call for help :(

A little over an hour later we arrived at the hospital and they told me I had a fever of 103.5 and the mysterious leg ailment was back. The nurses swarmed around me as I shook uncontrollably on the gurney taking blood, hooking up iv's and trying to get my fever and shaking to stop. I don't know when I finally fell asleep but when I woke up my fever had come down a little and they told me I was septic.

An infection (presumably from the first mysterious bout of illness in June) had run rampant throughout my system and was wreaking havoc.... and the scary swollen foot/leg was back. I spent the next couple of days in the hospital and then back home where I was put on permanent couch rest for 2 weeks and that brings us to now.

Yeah, it's been one heck of a summer and one I'm sure I won't forget anytime soon! I'm stuck with what I'm calling my elephant leg and in a couple of weeks they're going to run some more tests to see why the swelling isn't going down. They're concerned that it has now caused some lymph damage and I'm sporting a very stylish anti emboli stocking. Think Mrs. Doubtfire's hosiery LOL. Seriously not a pretty sight!

I apologize if you emailed me this summer and I didn't get back to you. My email inbox is overflowing with more than 12,000 emails and I'm afraid I'm never going to make it through them all. I think I'm going to have to cut my losses and just hit delete and start fresh so that I don't have a mini anxiety attack just looking at the number climb every day *grin*.

Please email me again if you did send me a message or had asked me a question that you would like me to get back to you on. I know that there have been some new comments the last couple of days on my fall felt leaves and I just wanted to say hi to my new followers and hugs to my long time faithful followers that have been waiting patiently to hear from me again :)

I'm going to try and keep up more regularly here again. It probably won't be everyday like it had been but definitely more than once every 3 months and I've got tons of summer photos that I'm going to try and post some of to. Like the rainbow cake I made for L's 8th birthday, how our chick's are doing (we're getting eggs now!) and our Michaelmas celebration that we did today :)

Homemade Rhubarb Juice ~ Recipe

We are still swimming in rhubarb around here as our plants just keep giving and giving :) So I thought that I would share again with you my favorite way to make a rhubarb juice which is such a wonderful summertime treat :)

The kids and I filled an entire laundry basket heaping to the top with fresh rhubarb stalks to bring into the house for stewing and of course once it is cut it's best to use it up right away so I got busy washing them up and trimming off any dirty spots.

This is so super easy to make and even if you only have a little bit of rhubarb you probably have enough to make at least one special batch :)

Cut up 6 cups of fresh rhubarb stalks into 1 - 2 inch pieces and place in a heavy bottomed sauce pot. Add 8 cups of water, 2 1/2 cups of sugar and 2 or 3 nice thick slices of lemon and bring to a boil. Once boiling reduce the heat, cover and simmer for about 15 minutes when the rhubarb has completely gone mushy.

Let the syrup cool and then strain it through a fine mesh sieve into a jar. You will have a gorgeous pink liquid and you can eat the boiled rhubarb to! The stewed rhubarb is so sweet and tasty that the children love to eat it warm straight from the sieve :) Usually there isn't a stitch of mushy rhubarb left when we're done but since I made so much this year I shared it with the dog and the cow *grin*.

I got some great new jars this spring to that I couldn't wait to use and this seemed to be the perfect time. They have rubber stoppers that you clamp down tightly and we've filled them quite a few times with rhubarb syrup to take along camping with us or for a picnic by the pond.

The rest of the juice I canned in my mason canning jars and some of it I froze as well. If you want to can the rhubarb juice all you need to do is wash up some of your larger canning jars and pour the boiling hot juice straight from the pot after you've strained it into your jars and then screw on your lids with your canning seals heated up just like if you were making jam :) So far I have about a dozen quart jars to last us through the winter and 7 wine bottles full in the freezer. It's going to be so much fun to be able to pull them out in the dead of winter and enjoy a little bit of spring :)

To finish off your yummy rhubarb juice you can mix 1 part syrup with two parts water or for a fizzy spritzer you can use a sparkling water like Pellagrino instead plain water for a real treat. Personally that's my favorite way to drink it and it is so refreshing on a hot day.

Weekending

It has been a simply beautiful weekend full of bursts of sunshine, squeals of laughter, splashing in the kiddie pool, weeding, planting, crazy flash rain squalls and time playing together :)

There was stick tossing in the raging river...

glimpses of the pair of canada geese that have a nest in our pond...

the calls from our cow as he begged for more clover and handfuls of grass...

major growth spurts in the vegetable garden...

baking sweet strawberry galettes, grinding wheat for pastry and rye breads, cookie mixing, a whole lot of finger licking and lip smacking...

and of course enjoying the fruit of all our work :)

Now you know where we've been hiding *grin*. Our days are just bursting with activity. Some of it chores but there seems to be an awful lot of play LOL.

I was listening to a podcast today about the different stages of a child's development and how important play and imagination are in those precious younger years and it was so reassuring to hear. Sometimes I feel that I am way to easy going and there isn't enough academics to counter balance the free time but I know they are learning everything they need to know and more and I just want them to enjoy every minute of childhood. There will be many days ahead to learn the hard stuff. For now I want them to spend as much time as they can exploring nature, creating things out of found materials, letting their creativity shine and learning gently through our daily routine :)

Ahh to be a child again would be such a treat :)

Planting and a Greenhouse Update

We're finally getting down and dirty *grin*.
My oldest and I shoveled all of the rows in the vegetable garden and hauled in manure to dress the beds with. I've been working this spot for nearly 10 years now and the soil is really starting to look super healthy. It was terribly poor sandy soil when we started and everything refused to grow in it but as we turned the soil this year it was loaded with big fat earth worms, was darker and it just looks better so I can't wait to see how everything grows!

I'm trying something new this year and using floating row covers over the newly planted seeds. Last year the birds took a lot of the seed right out of the ground as soon as we planted and I even had my first crop of broccoli stripped of every green leaf and had to start over. So this should keep everything safe!

You should have seen the robins sitting on the fence posts watching us as we put the beans in. You just knew that as soon as you turned your back they were going to swoop in but we quickly covered the bush and pole beans with the cover and foiled their plans *grin*. It's actually keeping the little seedlings warmer to! It's been only two days and they are already starting to sprout and they never germinate that fast.

Oh and check out my greenhouse!!
This is the back wall and it has two giant windows and just a foot and a half of solid wall at the bottom maximizing the early morning sun that comes over the mountain first thing in the morning...

and here is one of the side walls with another big window that will go in. I just love the smell of the cedar and the chunky size of the hand milled lumber that my dad milled :)

Only one more wall to go up in the front which will have two more giant windows and I have an old solid glass door for the front so it is going to be awesome! Oh my I can't wait. It is smoking hot out here all summer so it's going to be perfect :)

It's taking a little longer than I had planned for it to be completed as Hubby comes and goes between work but I've waited years for this to happen and even if I don't get to utilize the full summer growing season I'm going to do some winter crops in it this fall and next spring it'll be ready to go right away. Yay, I can't wait *grin*.

Ocean's Day Fun

This weekend was Ocean Day. All about fish and creatures of the sea :)

Oh my goodness was it fun! There were all sorts of tanks and buckets along the dock for the kids to investigate like this up close view of an octopus' suction cups :)

It was actually quite comical when the octopus showed up. We were standing there watching a big halibut when a fisherman zipped up in front of us and dumped a giant orange blob of jello into an empty bucket and starting to fill it with salt water. Well the octopus was less than amused and shot water out in a big gush at all of the little kids peering in :)

My youngest screamed and jumped back. If I hadn't caught hold of him I think he might have flown right off the edge of the dock finger we were all standing on and plunged into the ocean LOL. He wanted absolutely NOTHING to do with it anymore *grin*.

Other kids found it absolutely fascinating and would pick up his wayward tentacles that tried to escape the bucket and would put them back in!

A more docile lingcod allowed them to pet it and feel it's slimy scales...

there were all sorts of different sea stars to be picked up...

and of course there were stranger specimens like this spiky sea cucumber...

and this very interesting Nudibranch which I think is actually a member of the sea slug family. Ewww LOL.

Just a little further down the dock we found a large box of frozen fish. At first we weren't sure what they were for since nobody was there but we quickly found out what to do with them when we noticed a very large harbour seal swimming down below the dock :)

Each time we tossed in a fish the seal would come out from under a boat and take the fish to eat. So neat!

There was lots of fresh fish to be bought as well. This fishermen had lingcod, snapper and rock fish for sale by the pound. Some of it was frozen in the hold....

others were still alive and being held in little net pens off the sides of the dock like this one full of lingcod :)

Once we were finally all finished oohing and ahhing over the fish and getting our fill of touching them we headed over to the tents to pick up the fish prints that we had made when we first arrived.

Each of the children got a chance to make a print of a salmon...

and this very interesting China rock fish. Just look at that giant eyeball and mouth!

I just love how they turned out :)
After two hours, mild sunburns and a handful of stickers and posters each we finally called it a day and headed home. For the next hour as I drove us home the kids relived each and every moment so it must have been a great day *grin*.

Coffee & Danger

I don't drink coffee in the morning very often but by about 3pm I am craving it something fierce! It doesn't matter what's going on around the house or what we're in the middle of. If it's time for an afternoon coffee break everything grinds to a halt *grin*.

So today I thought I'd make a pumpkin cake with some of my home canned pumpkin spears, a sprinkle of walnuts and chocolate topped with a bit of icing as a special treat for coffee time :)

I had my hands full of magazines to show my mom and my camera when we left home so I got my oldest to carry up the cake and I couldn't help but giggle and snap a few pictures of him when I saw what was hanging out of his pocket...

his new copy of the Dangerous Book for Boys.

I found it at the thrift store the other day and knew he would love it. It's full of how to's on making bows and arrows, constructing tree forts, silly tricks, playing marbles, setting trip wires, building catapults, using swiss army knives and more.

So there he was, my wanna be dangerous boy, carrying the cake in his hands, a coil of rope slung over one shoulder and his handbook hanging out of his pocket :)

While my mom and I enjoyed our coffee and cake the kids gobbled theirs and ran off to play. They had more important things to do like ride bikes...

and learn to tie a better knot :)

I just know he's going to use his little brother as a guinea pig. Plus I think sometimes he secretly wishes he could tie him up so that he could have a moment without him asking a million questions or wanting to play with his toys *grin*. I just may have to teach the little guy how to chew through a knot! LOL.

Feathered and Ready To Explore

The girls are growing!
We keep calling them our babies but really they don't look much like those fuzzy little fluff balls we had anymore :) Their feathers are fully in and they are growing more inquisitive every day. You can see them eyeing up the outdoors when we come in to feed and pet them so I think we're going to have to get their yard finished. Some of the fence needs mending and a layer of fish net needs to be hung over the pen to keep the hawks and eagles from swooping in and taking any. We definitely don't want what to happen!

So while they're waiting to be released into the grassy wild we've been feeding them little dandelion blossom treats and they love them.

So much in fact that they fight over them *grin*.
One will get a flower in its beak and then another will swoop in and snatch it away and this goes on for a while until we drop in another for them to squabble over :)

My daughter on the other hand mesmerizes them. I think I have mentioned in another post that she is like the chick whisperer and it never fails that they flock to her :) Every time she picked one up it would just tuck its beak into the dandelion blossom and hang out. Talk about taking time to smell the roses.... or dandelions in this case *grin*.

She's been taking on a lot of the responsibility of feeding them to and heading out in the mornings on her own to fill their feed dishes and talk to them. It's so cute :)

Oh and I wanted to let you know that Hubby made it safely home Monday morning!! I waited up until 2am for him to get here and it was so nice to have him back. I got the play by play account of how the whole accident went down from him blowing the gear in his tug, to calling out on the radio in hopes that someone might be near enough to help him out and getting no response, to him waiting till the last possible moment to decide to cut his tow loose as he waited hoping that it might hit the beach and hang up on the rocks so that he could save it, and finally how he threw out the anchor which I thought would be a done deal and it was over but no he wasn't sure if it was even going to hold him!! Thank goodness it held or he would have been smashed to bits on the rocks through the rapids like his tow.

We enjoyed two days together as he rested up and slept after so many sleepless nights and now he's gone again. All thoughts of danger pushed out of my mind as we count the days until he returns again :)

Mouthwatering Rhubarb Pie ~ Recipe

Rhubarb season is in full swing and there is no shortage of it around here! We've been eating it in muffins, cakes and now pie :) The tartness of the rhubarb mixed with a good dose of sugar makes for a mouth watering combination. If you're not crazy about a sweet pie then a warm slice of rhubarb pie might change your mind. The tart bite of the rhubarb counteracts the sweet and melds together perfectly.

Pull out your food processor and start feeding in fresh stalks from your rhubarb plant. The amount of sliced rhubarb you need will depend on the size of your pie plate so pull out an empty pie plate and start filling it with your sliced rhubarb until you have a really heaping dish full. It will shrink as it cooks so more is better than not enough!

I have quite a deep pie plate so I used about 10 cups of sliced rhubarb while my mom can only squeeze about 8 cups into hers so using your pie plate will give you the perfect amount :)

Once you have all of your rhubarb sliced and measured out put it into a large bowl and add:

1 1/2 cups sugar
6 heaping Tbsp. minute tapioca
1 tsp. nutmeg
1 egg lightly beaten

and mix all of it thoroughly together. If you are worried that it's to much sugar, don't. You could cut it back a bit but I wouldn't take away to much. You need that sweet to keep you from puckering up to much when you take that first bite *grin*.

I know that lots of people use flour as a thickener in their pies to help all of those juices set but I really like to use tapioca because you don't have to worry about getting any lumps. It's just that easy!

Now that you have your rhubarb all mixed up, pour it into your pie plate that is lined with an unbaked pastry shell for the bottom of your pie.

Tuck a few dabs of unsalted butter on top of your rhubarb filling and cover with another sheet of your pastry. Pinch, roll, or tuck the ends of your pastry tightly together to help seal in all of that rhubarb goodness and to finish it off you can sprinkle a little bit of sugar over the top of your pastry. I also like to take a sharp knife and cut in a few slits across the center of my pastry to let steam escape as it cooks.

Place in a pre-heated oven at 400 degrees fahrenheit for the first 15 minutes and then turn your oven down to 350 degrees fahrenheit after that and continue cooking for another hour.

Mmm, mmm!

You will know your pie is good and ready to come out of the oven when your pastry has browned up, you can hear it bubbling and some of the juices are starting to escape :)

It's always a good idea to put a sheet of foil or parchment paper underneath your pie as it cooks because more often than not there will be a little bit of delicious sweetness that escapes and drips out of your pie. This makes clean up a cinch!

If you can keep yourself from cutting into your rhubarb pie while it's hot it will set up beautifully and the pieces will come out nice and solid. Of course we couldn't help but dip into our pie while it was still hot so we made a bit of a mess of ours but it was so worth it *grin*.

To Market We Go

The children and I had a lovely day today with an outing to the farmer's market. The sun seemed to shine just for us as we headed off down island :)

I never know what we might find at the market and actually had no plans to really purchase anything except for a few cookies for the kids as we wandered around the field checking out all of the vendors but I just couldn't resist all of the lush tomato plants that greeted us as we entered *grin*. I ended up with two bushy little heirloom polish paste starts that I just had to have because they are the exact variety that are giving me a really hard time here at home. For some reason those ones just won't grow for me so of course these would be the perfect replacements *grin*.

There were oodles of fresh greens, baked breads, jams, meats and more. I found some lovely red peppers and long english cucumbers grown not far from where we live and had to get a few of each. The ones in the supermarket have been from Mexico lately so it is such a wonderful treat each spring to find so many different vegetables grown right here on the island. I love it!

Just when I thought we had seen about everything I found a small table full of the softest alpaca fleece you had ever touched in hues of creams and browns :) I just wanted to take it all home with me *grin*. Thankfully my wallet wouldn't allow a purchase today but I did take a business card and she has given me a good price on a pound of uncarded fleece that I can process myself. I will have to put away a little bit of money so that I can get it the next time we are down. I can't wait to spin it!

I've been reading Sara's journey this spring over at farmama of how she has taken the raw fleece from her own sheep and scoured them, picked, carded, spun and then knit it into clothing for her family and this is something that I've longed to do for quite some time. Hubby and I are planning to build a lean to for the cows this year and I think I'm going to have to put on a space for a few sheep... I haven't told him yet but he knows I'm crazy for farm animals LOL.

On the topic of Hubby, I know some of you asked me to update you on how he's doing but I actually haven't heard from him since we spoke late Thursday night. I know he's surrounded with lots of help so he's in good hands. I just have to try and wait patiently for him to get phone service again so I can find out what's happening now :)

Rapids of Disaster

I hadn't heard from Hubby since he left Monday morning until he phoned me late last night to let me know that he was okay.

There's an old saying that tugboating is hours of boredom followed by moments of sheer terror! Well Hubby had his moment. He spends a lot of his time working further north in Seymour Inlet and taking his log tows through the Nakwakto Rapids which have the fastest navigable currents in the whole world (according to the Guinness World Book of Records) and it just happened that the gear in his boat blew there. He had no control and had to cut his tow loose, watch it disappear and smash into pieces. Luckily they could throw down the anchor to hold them from heading into the rapids themselves.

I think I was in a bit of shock when he told me. They had been floating there for over 30 hours already and since phone service is sporadic at best it had been the first chance he could call to tell me what was happening. The other guys from the company were up there with them collecting bundles and working on rebuilding the tow and sometime this weekend they'll tow him back home. I am just so thankful that he is safe!

In 2007 another local tug company towing a barge through the rapids had a mishap when they were overtaken by the barge they were pulling and their tug was completely sunk. They managed to scramble aboard the barge as it hung off of the sunken boat and thankfully they were all found safe but what a scare!

I can't wait for him to come back home :)

Green Pastures and Rainy Days

I can't believe how green everything is getting around here. It just seems like the fields grew knee high overnight! We've moved our personal lawn mower up closer to the house to *grin*. Before we take Bee down to the bottom field he's making the rounds around my house. I love waking up to him mooing in the morning and having him close so we can scratch his ears and of course try and avoid those licks he loves to slather us with :)

Our baby chicks are growing at lightening speed to. Believe it or not I haven't taken any photos of them lately. I must be slipping! They've pretty much got all of their feathers now and are quite the lively bunch :) I'm still getting the kids to pick them up and hold them as much as possible to keep them from becoming to skittish around us. My plan is that as they grow bigger we'll be able to take a few of them each day out to the garden with us this summer to let them scratch around and eat bugs :)

While the chicks are thriving, my garden could use some work. I feel like I'm terribly behind all of a sudden. I know that planting time for us has just begun but for some reason I just can't get it together *grin*. The soil is tilled and ready to go but we spent our week of sunny weather camping and now it's raining again :( I can just see my dad shaking his head and saying you never waste a sunny day! Travel and visiting is best saved for those rainy days *grin*. Wise words but I guess I could use hearing them again since I just did the complete opposite LOL.

I guess I'm just going to have to put on my boots and get ready to be soaked!

Fabulous Vegetable Fritters ~ Recipe

I have been dying to try making some vegetable fritters after running across a recipe for zucchini ones. I LOVE zucchini but why stop at that? I had to throw in peppers, carrots, herbs, and why you could even use beets. I hadn't thought of that! Now I know what I'm going to put in next time *grin*.

So much fresh goodness with a little bit of heat from the garlic and chili sauce.... mmm, they are so good that it left all of us wanting more :)

You will need:

1 medium sized zucchini grated (about 1 pound)
1/2 a red pepper diced
2 large carrots grated
3 scallions finely sliced
A big handful of fresh parsley chopped
2 cloves of garlic crushed
6 heaping Tbsp all purpose flour
1-2 tsp. hot garlic chili sauce
2 eggs
1 cup grated parmigiano reggiano
Sea salt and pepper to taste

Start by slicing, dicing, and grating all of your vegetables. Any method of grating will do. I actually used my food processor for the zucchini since the larger shreds of zucchini it produces will cook quickly in the hot pan, while I hand grated the carrot to get it nice and fine as I knew the carrot would take longer to cook them than the zucchini and I thought this might even out the cooking times. It worked out well :)

For the rest of the vegetables I sliced and diced everything rather fine just to keep it all nice and compact without to many really large and chunky pieces. My mom has a huge patch of parsley growing in her greenhouse so I picked myself a really big bouquet of it to use. I'm guessing that by the time I was done chopping it up it was close to half a cup but you could definitely use less if you don't have that much fresh on hand.

Did you know that fresh parsley keeps really well in a vase of water? It does! I like to keep a big bouquet of it on the kitchen windowsill and just cut off chunks as I need it. Just keep topping up the water supply each day and it can last there for a good couple of weeks :)

So with all of your vegetables ready, in a large bowl mix in the garlic, egg, chili sauce, flour, a couple good grinds of your sea salt and pepper...

and finally mix in your parmigiano reggiano. I love this cheese! Its salty taste and firm texture are perfect for this recipe as it doesn't melt down into a sloppy gooey mess when it heats up like some of the softer cheeses. Feta would also be a good substitution if you don't have any of the parmigiano reggiano.

Now that all of your ingredients are mixed together you will notice that it starts to weep a bit and some of the juices from the zucchini and peppers come out. Don't worry! Let the whole mixture rest for about 20 minutes and the liquid will settle to the bottom of the bowl. You can use the waiting time to clean up some of the dishes and heat up a large stainless steel frying pan over medium heat with enough olive oil or butter to thoroughly grease the pan but not to much that your fritters end up swimming in it :)

Once your pan is nice and hot drop heaping tablespoons of your fritter mix in and flatten them down slightly. I like to use two tablespoons to do this. One to scoop and the other to push it off the first spoon and into the frying pan. Keeps my hands clean *grin*.

Everything will start to sizzle and cook and you don't want to turn them until they have gone a nice golden brown. They will be to soft to turn easily if you don't wait for them to brown and firm up on the bottom half. Flip and continue to cook until golden on both sides and they are delicious served hot with a little bit of a yogurt dill dip :)

We all loved these and what a fantastic way to get more vegetables into your diet. A plus if your kids love them as much as mine did. You can hide any vegetables you want in these if you chop them fine enough! LOL.

Once Was Not Enough!

Well we're at it again!
Right after I shared with you photos of our trip to Loveland Bay we ran out the door to do some more camping *grin*. We made the quick pit stop home to do some laundry, shower, download the photos and off we went to another forestry campground :)

This time we made our way out to Pye Lake. It's another hidden spot about thirty minutes off road. This stretch on the logging road out to the lake winds along a rock cliff and a very steep drop off into the lake waaay below. To make it a little on the scary side it is barely wide enough for two vehicles to pass side by side let alone two truck and trailers like ours.

Unfortunately for us we met someone on it on our way home and as I looked out the passenger window and couldn't see the shoulder of the road below I was wishing desperately that I was on the rocky side rather than the cliff side *grin*.

When we arrived at the lake we couldn't believe our luck! The best spot right in front of the beach was open and there was only one other camper there. We thought for sure it was going to be busier with the long weekend going on :)

The good weather was still with us and the sun was shining good and hot so the kids got to head down to the beach for some fun.

I love this spot. There is a really nice sandy beach and it is shallow for a long way so you can wander out into the lake and not worry about any drop offs unlike some of the other spots we camp at. It definitely puts any mama worries to rest!

K found the water guns in the toy bag and a full on water fight began :)

They must have played in the water for most of the afternoon which was lucky for them as the weather turned the next day and we got a mix of cloud, wind and rainy drizzle. Not enough to make us want to go home but enough to keep them out of the water for the rest of our trip.

It has been like a mini holiday!

One whole week camping, hanging out with friends, playing in the lakes and yummy barbecued dinners, breakfasts & lunches *grin*. I don't know what day summer officially starts but I think it's happening here :)

First Camping Trip of the Season

We finally got to go on our very first camping trip of the year :)
One of my good friends that we get together with quite a bit also homeschools so we thought it would be great if we could arrange to go camping together just before the long weekend this week.

So Hubby asked for a few days off about a month ago and on Monday we packed up, hooked on our travel trailer and hit the back roads. One of the perks to homeschooling is camping during the week! Gotta love getting a great campsite while everyone else is working or in school *grin*.

It must have been just about dinner time by the time we made it out to our destination, Loveland Bay. The sun was starting to set behind the mountains and we took a few laps around the campground trying to decide which spots would be the best for us. Originally we thought one of the double sites would be great but by the time we pulled our trailer in beside one of the picnic tables we realized that our friend's trailer and awning would then be right behind the backside of ours and they wouldn't have access to their picnic table because of how they have those sites set up with the tables around the perimeter. So out we pulled again and settled on two single sites side by side :) We had never been here before and since we had never camped with them before we wanted to make sure that we got a spot that they would be able to enjoy just as much as us. Plus we went a day before they were due to arrive so we had to make all of the decisions on our own :)

The kids were so excited when they could finally bail out of the truck and the first place they raced off to was the water. The wind was blowing and it was cloudy so they looked on from the water's edge hoping that maybe the next day it would be nice enough to venture in!

Oh was it nice to sit around the blazing campfire when the sun went down. Normally we head north for our first trip and it is so cold that you nearly want to sit on the fire to keep warm so this was a nice change... chilly but enjoyable with the toasty warmth :)

To our surprise the next morning was sunny and every morning after that!!

This was the view that greeted my each morning as I dragged my chair to the beach where I could sip my coffee and read a book :)

When the other children arrived on Tuesday the fun really began for the kids and the boys started making a raft.

Even though the water was chilly no one could keep out. Check out the socks! LOL

There were a few trial versions of the raft and finally they had one that they could both stand on and it didn't sink or fall apart *grin*.

Of course every raft has to have a flag so an old pair of skivvies were found and proudly hoisted up on the stick LOL. Oh my goodness was it funny to watch them!

Our friends had brought along a canoe and the youngest two couldn't get enough of it. Her husband was so great about it and took them around the lake quite a few times and I think we're definitely going to have to get one :)

It was a great week with good friends, good food and good times :) We're definitely going to have to do this again!

Rhubarb

Rhubarb season is finally here and those bright red and juicy stalks are beckoning me *grin*.

The extended cool and wet weather we have had this spring has really allowed them to burst from the ground with gusto and I found a giant bloom on one of my plants!

Rhubarb blooms are really pretty when they open but I want my plants to continue to produce for a little while longer so I broke it off. The kids brought it into the house and we'll see if we can force it to open in a jar of water :)

The leaves of the plants are poisonous so you can't eat them but they make a wonderful natural insect repellent for deterring cabbage worms, aphids and other things. Just throw a bunch of leaves into a pot, cover with water and bring to a boil. Pour the strained liquid into a spray bottle and treat any plants that have buggy problems!

I think for now we'll just enjoy some of the raw stalks dipped in a little bit of sugar. A yummy way to enjoy this tart treat :)

Weekend Blooms

More and more of the spring flowers are starting to bloom and it is such a treat to see them when I wander out the front yard. It was especially nice to see the bergenia this afternoon as I attempted to dig up the gravel pathway by the front door to get all of the grass and dandelions out that had made the rocks their new home. A little bit of beauty in a sea of weediness :)

The cowslip primula is one of my all time favorites with their big droopy clusters of yellow flowers and the smell is amazing. All you have to do is touch them and their sweet fragrance fills the air.

I have no idea what the name of this peony is but it pops up every spring. My mom planted it here nearly 30 years ago and it returns faithfully every year :)

A pretty little pink double primrose. This one is a volunteer that popped up in the driveway :)

And finally Therese Bugnet. I know there aren't any flowers on it yet but it won't be long and there will be masses of deep pink roses all over. She's super hardy to! You can really expose her to some harsh elements and it comes back just as full as the year before :)

Let The Construction Begin

It's really coming true!
The building of my greenhouse has officially begun and I feel like I need to pinch myself just to make sure I'm not dreaming it all up *grin*. Hubby finished drawing up the final plans with all of the measurements and how he plans to frame in the windows and today he started to lay the brick down.

We wanted to keep the wooden frame of the greenhouse from sitting in standing water that collects during the rainy months on our concrete porch so hubby cemented down heavy cinder blocks all around the perimeter and the walls will then be built on top of them. To make sure that everything will be rock solid he also sank anchor bolts into the wet cement so that the walls can be bolted down tight to the concrete.

He ran out of sand though so tomorrow he'll have to grab some more and finish cementing down the last couple of bricks and then he can start framing up the walls. So exciting! Now I just hope the rain holds off. It sprinkled a little today but if it pours down like the forecast is calling for the cementing will have to wait for a drier day. I'm going to keep my fingers crossed *grin*.

Ugly Duckling Syndrome

Our girls are growing so quickly!
They will be three weeks old on thursday and as you can see they are definitely much larger than those little fluff balls that fit perfectly into small hands only days before :)

The kids thought they looked a little bit like ugly ducklings today *grin*. Their fluffy down is being replaced by feathers and the transition is so interesting to watch :) This little girl must have felt small today as she kept stretching as tall as she could!

We brought a couple of them into the house today and set a towel down on the living room floor so that they could roam around a bit. They really seemed to love my daughter and gravitated straight for her...

She's like the chick whisperer *grin*, and the boys were just a tad jealous of all the attention she was getting LOL.

It's a little bittersweet to see them maturing so quickly but then again I am really looking forward to all of those fresh eggs!

Weekending & Happy Mother's Day

Happy Mother's Day everyone!!
The kids surprised me this morning with little pencil drawn cards chock full of xoxo's and a gorgeous bouquet of flowers. Oh it smells and looks just wonderful and it was such a treat :)

I can't believe it has been a week since I was last here! Hubby was home most of the week so we did a lot of work around the yard but it also gave me a chance to take a special trip down island with just my mom. An early mother's day outing you could say :)

We ended up in Coombs which is such a fun place to visit. Every spring they open up their little garden nursery full of super healthy looking veg starters, herbs and perennials...

and there is all of the great fresh fruits and vegetables in the market along with dishes, textiles and more. We had lunch at the restaurant and then slowly made our way back up north. I can't remember the last time we had a mother daughter day without the children, just the two of us :) It was really nice.

Back on the home front our house has been getting some attention. I finally got a new storm/screen door. Yay :)

The old one had an unfortunate incident with a mad one horned goat on a rampage and by the time he was done head butting it only the frame of the door was left. Yes it's true... not a stitch of screen or glass left *grin*. I can look back on it now and have a good laugh but in the heat of the moment you can be sure I was not impressed *grin*.

We have a great re-use store located in the next town that is operated by Habitat for Humanity and people donate all sorts of used building supplies that the sell to raise funds for building new homes for those in need and that is where I finally found my new to me screen door :) Can you believe that I got it for only $20!! All it needs is the screen repaired which is super easy and all of the glass and paint is pretty much like new!

The old railing around our sundeck came down this weekend to. It was in really rough shape. Most of it was rotten and the giant juniper hedge growing around it had wound itself through many of the spaces in the boards so hubby had to bring out the big tools to rip it down. Why use a hammer when you can use a chainsaw :)

So with the deck down this is going to be the future spot of my new greenhouse :) Hubby's been working on plans, figuring out measurements for fitting in the windows and how to make it all work when it's only going to be 8 x 11 feet.

And to top it all off my dad surprised us with a whole bunch of rough cut cedar that he hand cut on his mill :) This is such a blessing! It will save us so much money and I love the skookum size of the big 2 x 6's. I'm crossing my fingers that it will be done and ready to use by the beginning of next month :)

Camping season is inching ever closer as well and every summer we have strict campfire bans here on the island which is no fun. So this year we purchased one of the new propane fire pits that have a low flame, throw off a nice bit of heat, don't spark like a normal campfire and they are allowed during the fire bans :)

Hubby wanted to try it out so we had it set up on the front porch and it really will be nice to use it this summer because sitting around an empty fire pit in the evenings while camping is just not fun!

Weekending

I thought I'd share a few snapshots from our weekend :)
It has been a beautiful couple of sunny days which was a lovely change from the rain and weird hail storms we've been having although as I type this I think we are heading back to stormy days by the look of the gray clouds that are sweeping across the blue sky!

The children have been enjoying the first dandelions of the season and making necklaces, bracelets and earrings with them. I can't think of a better way to use them up :)

Under a big oak tree in the backyard we have an old tractor that we use for parts and it is the perfect refuge during a flash rain storm or when it's to hot out :) It makes a pretty good play place to as the steering wheel gets a good workout and all of the knobs and levers are cranked back and forth *grin*.

Of course with three bums and only one rusty old tractor seat it just doesn't accommodate everyone so naturally someone has to ride shotgun on the giant tire *grin*.

Lately my oldest has been using it as a bit of a learning tool as he takes apart bits of the engine at a time to see how things work together. This weekend he freed up the gear box which has been sticking and he was rather pleased that it can now be shifted into first, second and third gears *grin*. It will never run again as it is missing to many parts and seized but how wonderful it is that he can tear it apart and rebuild to his hearts content :)

It wasn't hot enough to dry up all of the puddles but what is a puddle without someone splashing in it :)

Transplanting

It was a perfect day to sit outside and do some much needed re-potting of my tomato plants :)

I can't believe how fast they have grown! This will be the last time I re-pot them until they make their final trip out to the greenhouse which I hope is very soon. I'm so excited because hubby and I found some great big pieces of glass for the new greenhouse he is building me and I'm hoping that when he comes home he will be here long enough to maybe nearly finish it *grin*.

So with all of my tomato babies packed outside I got busy pinching off all of the leaves that were going to be buried underneath the soil in the larger one gallon pots...

and then filled each pot up with potting soil and a really healthy dose of cow manure. I think I must have filled each pot more than half full with manure *grin*. Mama wants some BIG tomatoes LOL.

When I started packing them all back inside I had just enough room on the bay windowsill to fit all of the pots. I guess it's the next best thing to having a finished greenhouse :) Maybe it will be good incentive for hubby as he really doesn't like it when I turn the dining room into an indoor jungle *grin*.

Painting with Wool ~ Wet Felting

My little girl and I had fun today playing with some of our felt rovings and creating felt scenes :)

I know that many of you felt quite regularly but I thought I would take some photos of our progress today and share them just in case some of you are unfamiliar with how to wet felt wool :)

It's a really fun craft and you only need a few different colors of wool rovings to get started. We used corriedale rovings that I purchased here and you want to start by taking small chunks of your roving and pulling it apart evenly so that it is all fluffy and lay them down on a sushi mat or sheet of bubble wrap. Lay down one complete layer going horizontally and then repeat the process laying down your wool vertically and again the opposite way so you have three layers of wool.

Now you can get really creative and start adding the details to your picture :)

It's like painting with wool *grin*.

L wanted lots of flowers so we tried something new and cut out flower shapes from a sheet of the pre-felted craft felt and then placed a few loose strands from our wool rovings over them to hold them down as I wasn't quite sure how they would felt :)

When she had all of the final touches added we placed the wool covered mat on a cookie sheet, covered her picture with a piece of mesh and started to slowly dribble water all over it until all of the wool was wet. The cookie sheet will keep all of the water nicely confined so that you don't end up with a giant water puddle on your table :)

Drizzle a little bit of liquid dish soap over the top of your mesh and start to slowly and gently rub the surface of your mesh. You will start to notice that the wool begins to work together and doesn't move around as much under the netting. Make sure you lift the netting off of the wool every couple of minutes though as the wool fibers will start to work their way through the holes in the mesh and you don't want your picture to get stuck to the netting :) Keep doing this until all of your wool looks like it has bonded together well enough that you can lift it gently and it won't all fall apart.

Now that you have one solid sheet of felt, albeit a delicate one, you can roll your mat or sheet of bubble wrap up tightly with your felt and netting inside and roll it back and forth. This will squeeze out some of the excess water and continue to agitate your wool and help it work together even tighter.

Continue rolling for a couple of minutes, then stop and unroll it, pull up the netting to keep it from sticking to your felt and then turn the entire piece of felt 90 degrees so that when you roll it up again it will agitate the wool in a different direction from the last time. We kept rolling and unrolling for about 10 minutes and then I took the whole thing over to the sink and plunged it into hot water and then cold water a few times to really shock the wool so it tightened right up.

Now that you are all finished with the water you can unroll it, remove the netting and roll it up in a tea towel to suck out the excess water :)

And here is her finished picture. I think she must have had an Easter theme in mind with the little bunny in the flowers :) I just love how it turned out for her and tomorrow when it is completely dry we're going to hang it up on the wall.

Chick Love ~ Fuzzy Baby Overload

We brought in some of the babies so that we could cuddle and love them and somehow it turned into a bit of a photo shoot. I just couldn't help myself!

In my defense though I did warn you that I might go a little chick crazy... but could you resist such an adorable little ball of fluff?!

I thought not *grin*.

Such sweet little girls :) They were so content to just hang out in the little dishes we put them in so we could ooh and ahh over them *grin*. After a while they got a little more adventurous and started hopping in and out and checking out the flowers. They didn't stray far though and they are so incredibly docile to. We can pick them up and cuddle them and they don't squirm or try to fly out like past chicks we've had.

Of course it was inevitable that there would be a little 'incident'. At least they kept it on the paper that I had put down for just that exact reason *grin*.

Happy Easter

Wow, it has been one crazy weekend and then some! Today is the first day since last Wednesday that I have been home all day and haven't had to travel into the city and it feels SO GOOD. Between swimming lessons, science group, picking up chicks, easter celebrations and an impromptu trip to Costco it's been go go go here :)

We had a lovely Easter though. On Saturday we had dinner with my sister and her husband and then my mom and I had a sleep over at their house so that we could go to the movies and catch a little retail therapy *grin* and today the kids and I went to my parent's house for an Easter lunch.

After the great success I had making ice cream cone cake pops last summer I thought I'd try making some Easter themed ones so last night I whipped up a cake for making the balls. Hubby thought I was nuts *grin*. Out came the fresh cake from the oven and I proceeded to smash it up making a gooey mess with icing LOL.

I love playing with these although rolling the balls in the chocolate was a little trickier as they had a habit of spinning on the sticks. Nothing a little stint in the freezer couldn't cure though and they were good to go *grin*.

We had all sorts of yummy finger sandwiches, vegetables and desserts...

my mom had plenty of treats for the kids...

and I think they ate enough cake pops and pez to induce a sugar overdose LOL. Thank goodness it's all over and tomorrow it's back to normal we go :)

Easter Babies

Our little chicky babies arrived today and just in time for Easter :) It couldn't have been better timing!

Everyone was so excited to peek into the box we brought them home in and help move them under the heat lamp :) Of course we had to have the 'you have to be really gentle' talk with the little man but he truly wanted to be as careful as possible with them and he is going to love them so much *grin*.

They are so stinkin' cute!!! I'm going to apologize now because I think there might be quite a few baby chick pictures in the coming days LOL.

White Washing

I think I speak for both my oldest son and myself when I say we are getting really excited that our chicken coop remodel is nearly finished *grin*. It was great when Hubby was home and he put in a brand new door so that we could get in and out of the house easily but since then it's just been me and the kids :)

The last couple of days we've been cutting, hammering, sweeping and scraping the walls using a wire brush to get any old paint and muck off of the walls in preparation for white washing the walls. With all of the dust and dirt that was flying around I thought it wouldn't hurt to wear some masks so that we didn't breathe to much of it in :)

There haven't been any chickens in this old house for quite a few years and we found numerous holes in the floor that needed to be covered to stop any mice or rats from coming in and then there were a few larger ones leading in from the old nesting area that required some larger boards to seal off the main room to keep any other animals out that might find their way in. We do have a really big problem with raccoons and mink so I want to make sure that our new little babies are going to be safe. Plus we don't have any need for nesting boxes until later this fall when the chicks mature enough to start laying some eggs :)

Thankfully I know my way around a skill saw *grin*. K and I scavenged through the old lumber pile by the wood shed looking for boards that didn't look to rotten and then dragged them up to the house where we could measure them and cut them to the right length for the wall we needed to cover. From there we took them back to the chicken house and started to close in the wall.

Oh boy did we have some good laughs!! K was having some trouble getting the nails started while holding the chicken wire tight behind the boards that we were nailing up so I held the wire all the while cringing as I hoped he wouldn't hammer my fingers LOL. He thought it was hilarious that I was so worried yet only minutes before he was eyeing me up skeptically as I balanced boards on the saw horses and he was worried that I wouldn't know how to use the saw :) Yup, we are quite the handyman duo *grin*.

So with all the wood work done it was time to give the insides a nice clean coat of paint with a lime white wash. It's good and cheap to make, brightens up dark and dingy barn rooms and as an added bonus it helps stop any bacteria from growing.

Just in case you're interested here's how I made it :) You will need a bag of Hydrated Lime. Make sure you get hydrated lime and NOT dolomite or garden lime. Dolomite is the greyer colored lime that you can find at grocery stores and garden centers and it is okay if you put your hands in it but Hydrated lime is a purer white and usually can be found at any building supply or farm and feed store and it has a big warning on the front of the bag that it is corrosive so when you handle it you want to make sure you wear gloves and preferably a mask when mixing because you don't want to breathe in the powder as it flies in the air.

Using a large plastic pail to hold the lime and a large coffee tin as my make do measuring cup I scooped out five full coffee tins of lime and put them into my plastic pail and then I added just under two gallons of water and stirred it well to combine the water and lime. Protective eye wear is a good idea at this point to keep it from accidentally splashing in your eyes. You want it to be a nice thick paste so don't add your water all at one time or you will have to add more lime :) Now you can tuck it away for the night. This makes what they call slaked lime and is actually the base of house plaster if I'm correct.

The next morning or whenever you get back to it, take your pail and pour off any excess water that is sitting on top of the lime paste. This is water that the lime couldn't absorb. The paste as it stands now is much to thick to paint with so you will want to thin it with some salt water. I used 2.5 pounds of pickling salt to one gallon of water mixed well together and then poured a little at a time into the lime paste. You want it to be like the consistency of pancake batter but make sure you don't add to much water! You can't add more lime anymore at this point. Once you have thinned your white wash to a spreadable consistency you are ready to paint :)

Wearing our rubber gloves and eye protection we got to work painting on the white wash. Oh my goodness this stuff is AMAZING!! It spreads on nice and thick so you get good coverage and even though it looks a little grey while it's wet it dries bright white! Our chicken coop has never ever looked so clean and good :)

Only a few more days and our babies arrives... just in time for Easter!!

Deliciously Green

I generally try not to make new year's resolutions as I have a terrible time keeping them but this time I made a promise to myself to live this year intentionally. I want to grab the year by its horns and live it to the fullest, taking control of my days and getting the most out of them for both myself and my family :)

There are so many facets of our life that that encompasses. Such as my desire to slow down the rhythm of our days in order to make even more time to cherish my family, enjoy the simple things life brings no matter how small, increasing our self sufficiency by growing more vegetables and raising more livestock, and fine tuning our diet to try and make sure the foods I prepare for my family are as wholesome as possible to name just a few.

That last one is a tough one though but I'm working on it :) Which is actually where I'm heading with this little ramble that I've taken you on *grin*.

For the last couple of months I have made it a morning habit to blend up a surprisingly yummy spinach smoothie for myself and the children :) When I first thought about making a green smoothie I was a little worried that I was going to hate it despite my want to love it but I think the whole scary thing was in my head because I do really like it *grin*.

I pack my blender right to the top with fresh spinach leaves along with a little bit of fruit, a splash of maple syrup and ice cold herbal tea. Usually I put in an apple or a pear but blueberries are delicious and soon there will be fresh strawberries from the garden to add :)

When I first started making it I was using plain water as my liquid to help puree everything in the blender but I love the extra flavor that herbal tea provides. Our latest favorite is raspberry and each morning after I've used up what was in the fridge I replenish my mason jar with hot tea and pop it into the fridge for the following morning :)

I think I'm going to have to start making two blenders full though as it seems the kids want to drink more and more of it every morning *grin*. I'm not complaining though but tomorrow I'm heading out to weed out a patch in the garden so that I can plant a whole lot of spinach :)

Fluffy Tissue Easter Chicks ~ Kids Craft

Easter time's a coming, Easter time's a coming.... *grin*.

I loved making these fluffy tissue chicks when I was a little girl, twisting little bits of tissue paper on the end of my pencil and sticking them onto paper in the shapes of hearts, chicks and other animals. I'm seriously just like a little kid when it comes the crafting! I can't wait to get in there and cut and paste along with the kids no matter what the occasion LOL.

Since Easter is actually just about here I thought we'd better get going on some special crafts! Out came the construction paper, odds and ends bits of tissue paper, pencils and glue and we got cutting :) This is such an easy craft with such cute end results that you've got to try it if you haven't before!

Cut any color of tissue paper into a whole lot of little 1.5 - 2 inch squares and then cut an egg shape out of construction paper or cardboard for each child plus yourself :) Next take one square of your tissue paper, place the eraser end of your pencil in the center of the square and pull up the sides of the paper and scrunch it all up around the end of your pencil.

Dip the end of your pencil into the glue...

then press your pencil end with the gluey paper down onto your egg cutout and repeat :)

You just keep squishing and sticking your scrunched up tissue paper to your cutout until you've filled the whole thing up and made yourself a fluffy little chicky :) We made ours look like our chicks were popping out of their shells on the bottom but you could even decorate them like easter eggs with different colored polka dots or waves and so on all over them. They make fantastic fronts for Easter cards to. So fun!! I just love the great 3D texture you get from all that tissue paper :)

I had a bit of yellow ribbon in the cupboard so I punched a hole in the top of each of them and threaded the ribbon through to hang them up in our family room window :) It was a good thing I wanted to hang them as it gave me incentive to finally take down the cinnamon stars that were hanging there from Christmas! I know I'm terrible aren't I *grin*.

Taking In The Beauty Surrounding Us

Talk about disbelief this morning! This was the scenery that greeted me when I looked out the kitchen window as I made breakfast. It didn't last long but it has brought below zero temperatures again despite the gorgeous sunshine that graced us today :)

I wanted to treat the kids today so we went down to the little corner store and they got to pick out a little candy and we drove the end of the road where it narrows and stops abruptly...

where the wooden planks and rocky edges join as one with the Johnstone Strait :)

The hues of blue welcomed us and the icy wind whipped around the car but the view was divine. We are so blessed to live only minutes from the ocean. It has to be my favorite place on earth to be :)

So while the kids munched on their treats I enjoyed the weekend edition of the paper...

and they all took turns using the binoculars to look for ships and signs of whales and seals. We had an amazing experience of seeing one of the young bald eagles testing out its hunting skills as it swooped down and attempted to snatch a fish from the ocean's surface! It missed but still very cool :)

Crew boats heading out to the nearby camps had a bit of a bumpy and lumpy trip today as they crashed their way across the strait through the white caps and I was just happy. Oh so happy taking the beauty in around me and listening to the giggles in the backseat :)

Growing Colonies Of The Fuzzy Kind

I thought it would be fun to share just what we're growing in the kitchen this week :) No it's not vegetable seedlings or easter grass.... think a little more creepy *grin*. We're raising our own colony of bacteria :)

We started with three petri dishes and to try and keep it as scientific as possible I got my oldest to boil and sterilize all of the dishes before we started so that we could keep as much extra bacteria out of the equation as possible.

As soon as our petri dishes were ready to go we filled them with agar or in our case gelatin since I didn't have actual agar :) We brought one cup of water to a boil, stirred in one teaspoon of sugar, one package of knox gelatin and a few drops of orange food coloring and simmered the whole thing for 30 minutes. Once the 30 minutes were up we portioned out the gelatin equally into each of the three petri dishes and waited for it to cool and set.

The next step was to decide just what we wanted to swab and transfer into our dishes. K had such a hard time picking since we could only use two dishes and he wanted to try so many different things :) So he settled for the kitchen sink and the telephone with our third dish as the control.

At each place he took a clean q-tip and swabbed it all over their surfaces and then he took it to one of the petri dishes and gently rubbed it over one quarter of the gelatin then turned the dish 90 degrees and rubbed it again over the quarter section making sure that he pulled some of his strokes through the edge of section he swabbed last until the entire dish was covered :)

With each one carefully labeled...

it was time to wait and see just what would happen!

We're five days into our experiment and things are growing and remember all that sterilizing we did in the beginning so that we would have a super clean control petri dish? Well that baby is growing some funky fuzz of its own! LOL.

Peek-A-Boo

I think I want to be like this guy. Hanging out in the pond, partially submerged, taking in the scenery but keeping outta sight *grin*.

My days seem to be moving at lightning quick speed lately. So fast that I can't seem to catch up. We're still working on repairing outbuildings and getting the garden beds weeded and on top of that I've stepped up our homeschool routine. Those of you who know me well know that I'm a bit of a tidal homechooler with our learning coming in waves of high activity followed by more calm and relaxed phases. Well right now we're in hyper drive *grin*

I like to finish up our school year by the end of May because we have better things to do like camping and playing outdoors but that means we have to hit the books hard :) We're right on track though! K has finished up his math and english texts and we have a few key topics to touch in science and social studies still but it looks like we'll be done on schedule.

I'm actually really proud of him. I have never done any testing of any sort but I thought since he's getting a little older now and heading into grade 7 that I'd feel him out and see how he would handle some light quizzes where he knew he had to do the best he could. He really took to them and got A's and B's for his marks :) He was so proud of himself and it gave me a really good gauge as to how he's retaining this year's materials. Looks like things are sticking! LOL.

Most of my online time this week has been spent reading the homeschool boards and checking out what is available for our fall semester to. I was talking to Hubby on the phone the other night joking that I've been eating, breathing and sleeping math texts LOL. I had no idea that there were so many choices for math and I have come across some really cool looking science programs to. I love picking out new books :) We're still using Sonlight as our core for history, readers and bible but I always supplement their english program and add more science materials and of course add in math and the extra electives.

So that has been keeping me mighty busy but I'm hoping to pop over to see what's happening on your blogs this week! If you've emailed me and haven't heard back from you I promise I'm going to catch up :)

Exploring the Estuary

Yesterday we packed up the kids and headed off to one of my favorite local trails but when we got there we found that the bridge heading into the estuary had been fenced off.

It's hard to believe that this weathered foot bridge used to be a single lane bridge that I drove my car across four times a day, three times a week to reach an elderly woman I did home nursing for. Over the years the decking started to deteriorate so they built a foot bridge over the old bridge but it is getting soft in spots and sometime this summer the whole thing is going to be removed. Hopefully they will replace it but that is still not a sure thing.

Of course us local yokals don't get scared off by a few signs with bold red lettering and we skirted around the edge of the fence and headed on into the forest *grin*.

To be on the safe side we did go single file except for the little guy who went along with his daddy :)

As we wandered through the forest we were surrounded by amazing old growth trees. They are true giants!

This one was actually completely hollow inside and was big enough for all three of my kids to fit in and my dad for a photo. So much fun!

Where the old cottage used to stand there is now the above sign with all sorts of information on the different plants and animals that can be found along the trail. When the elderly lady that lived here passed away the property was donated to Ducks Unlimited and all of the old buildings were removed so that the grounds could return to their uninhabited state. I used to stand in this very spot when it was her kitchen and stare out the windows watching the river, swans and deer pass by. So many fond memories.... now only stories to tell to my children.

Just past the old homestead site is the estuary :)

The kids had fun exploring the grassy banks of the river. It wasn't long before the rain started though so we had to head back into the forest to take cover *grin*.

As we wound our way back around the loop to the main trail we took our time checking out all of the different mosses, poking and petting each one and talking about how they were all unique.

This tree always draws a lot of interest when we visit to as we try to guess what sort of animals may have been gnawing away at its pulpy insides :)

So many things to investigate along the way. The poor little guy got all tuckered out towards the end though and Hubby was more than happy to carry him like a good old sack of potatoes *grin*. What a turkey!
